Red, White and Blue Ambrosia

Wow! This was so good I couldn't stop eating it! I followed the recipe exactly and it was delicious! Maybe next time, I'll use light cream instead of heavy cream to lower the fat content. I wouldn't change anything else! Update: I tried it with light cream and it just didn't have the same thick texture needed for this recipe. That's ok - it's definitely worth the calories!

Slow Cooker Mexican Casserole

This was a pretty good recipe but the texture was a little "mushy" for my taste. I used ground chicken instead of sausage to lower the fat content. Otherwise I followed the recipe exactly. It was very easy to prepare and I'll probably make it again.

Wild Rice Chicken

This was delicious! I couldn't stop eating it! As suggested by another reviewer, I sauteed the onion before adding to the rice mixture to give it a more subtle flavor. I used Cream of Chicken soup instead of Cream of Mushroom because of personal preference and I added some chopped broccoli. This was so easy to make, but it's nice enough for company, too. Thanks for a great recipe!

Pasta with Hot Sausage Sauce

This is a wonderfully easy, delicious recipe! I followed it pretty closely, except I used turkey sausage to reduce fat and I left out the capers, because I didn't have any. I drained the whole tomatoes and then mashed them before adding to the sausage. I reduced the pepper(s) to 1/8 tsp. each because my husband is not a fan of spicy food, but the wine & spices still added plenty of flavor. I let it simmer for about an hour and it made a thick, rich sauce. I'll definitely be making this again. Thanks for sharing!

Slow Cooker Chicken with Mushroom Wine Sauce

Excellent recipe! I followed it exactly and cooked it on low for 5 1/2 hrs. It was just right. I have had trouble in the past using chicken breast in the slow cooker because it would become tough and dry but this was delicious. I will definitely make this one again!

Sugar Cookie Icing

This recipe definitely needs to be adjusted. 2 teaspoons of milk was not nearly enough - I probably used close to 2 tablespoons. I also used a little more corn syrup than called for until the consistency was thin enough to spread with a knife. Once I got it right, I added green food coloring and used a knife to drizzle it over the cookies. It was prettier than I expected and hardened up nicely.

Chocolate Mint Cookies I

Wonderful recipe! These cookies remind me a little of Girls Scout Thin Mints. They were very easy to make and freeze well. I followed the recipe exactly except I was 2 Andes candies short, so I used chocolate chips on top for the last few cookies. I plan on taking them to a cookie exchange next week. Thanks for a great recipe!

Delicious Ham and Potato Soup

This soup was absolutely delicious - very rich, creamy & flavorful! It's more like a chowder than a soup. I followed the recipe exactly except I used turkey kielbasa instead of ham. My husband enjoyed it, too. I'll definitely be making it again! Thanks for sharing!

Easier Chicken Marsala

Overall, this was a pretty good recipe. I didn't have garlic salt so I used seasoned salt instead. I also used white wine in place of the marsala. This may have made the sauce a little thinner than it should be. Also, when cooking the chicken in the wine at the end, I would recommend not covering the pan, because this tends to make the chicken tough. Next time, I'll definitely try it with the marsala wine. Thanks for sharing!

Orange Pecan French Toast

Wow!! What a great recipe! It's so convenient to prepare it the night before and pop it in the oven the next morning. The combination of orange, brown sugar & pecans was really unique and delicious. I followed the recipe exactly, except I used Italian bread instead of French. I wouldn't change anything else!

Almond Maple Granola

This recipe went over really well with my family when they came to visit for Christmas. Everyone loved it! It's not too sweet and really delicious! I did cut back on the coconut and only used a 7 oz. package, which was still plenty. I wouldn't change anything else. Thanks for a great recipe!

Broccoli and Cheddar Soup

This soup was delicious and very easy to make! My husband isn't usually a fan of broccoli-cheddar soup, but even he liked it. I followed the recipe exactly, except I used reduced-fat butter and it was still very rich & creamy. The sharp cheddar really adds a nice flavor. Thanks for a great recipe!

Garlic Cheese Biscuits

Wow! These were truly excellent! Very light & tasty and easy to make! I used Heart Healthy Bisquick and added 1/2 tsp. of garlic powder to the mix before baking, as others suggested. Instead of butter, I used Smart Balance and added 1/4 tsp. of garlic powder instead of 1/2 tsp. I will definitely be making these again!

Quick and Easy Cheese Bread

This bread is very tasty! I followed the recipe exactly except I increased the milk to 1 cup as others suggested and used a combination of mexican & mozzarella cheese. It has a very nice flavor (not too sweet) and texture and didn't crumble at all. Next time, I might try an 8x5 pan because the loaf didn't rise very much and my baking powder was fresh.

Slow Cooker Enchiladas

This was really delicious! I followed the recipe exactly except I used half the amount of cheese and it was still plenty. I was surprised that the sauce was so tasty with the soup/salsa combinations. Be careful not to overcook or the tortillas will get mushy. I will definitely make this again!

Holiday Chicken Salad

This is one of the best chicken salads I've ever had! The mayo is not overpowering and the combination of spices is just right. I cut the recipe in half and substituted walnuts for the pecans. Definitely a keeper!

Black-Eyed Pea Salad

This is a very good, colorful, nutritious salad! I followed the recipe exactly except that I used 1 extra large red pepper instead of 2 medium peppers and dried parsley instead of fresh. The flavors blend nicely together and it is very refreshing on a warm day.

Pat's Award Winning Carrot Cake

I have to agree with the other reviewers that this cake was fantastic! I made it for my mother-in-law's birthday and it was a hit! It's definitely one of the easiest carrot cakes I've ever made. I skipped the frosting & gave it a light dusting of powdered sugar instead. It was still plenty sweet, moist and delicious. Thanks for a great recipe!

Betsy's Mandarin Orange Salad

What a great salad! I made it yesterday for the Super Bowl and my mother-in-law commented that it was one of the best salads she's had in a long time. I especially liked the flavor combination of the caramelized almonds and oranges. I did use clementines instead of canned. I also cut back on the red onion. I only used about 1/4 of the onion because I think using the whole onion would have been too overpowering. I'll definitely be making this again.
