Slow Cooker Chicken with Mushroom Wine Sauce

Reviewed: Aug. 27, 2006
Excellent recipe! I followed it exactly and cooked it on low for 5 1/2 hrs. It was just right. I have had trouble in the past using chicken breast in the slow cooker because it would become tough and dry but this was delicious. I will definitely make this one again!

Bubble Pizza

Reviewed: Aug. 31, 2006
This was pretty good! It's very easy and can be prepared ahead of time. I used ground chicken instead of ground beef to reduce the fat content. I also reduced the amount of cheese and it was better than I expected. Otherwise, I followed the recipe exactly. It's definitely more of a casserole than a pizza. I'll probably make it again.

Slow Cooker Enchiladas

Reviewed: Sep. 7, 2006
This was really delicious! I followed the recipe exactly except I used half the amount of cheese and it was still plenty. I was surprised that the sauce was so tasty with the soup/salsa combinations. Be careful not to overcook or the tortillas will get mushy. I will definitely make this again!

Easier Chicken Marsala

Reviewed: Sep. 14, 2006
Overall, this was a pretty good recipe. I didn't have garlic salt so I used seasoned salt instead. I also used white wine in place of the marsala. This may have made the sauce a little thinner than it should be. Also, when cooking the chicken in the wine at the end, I would recommend not covering the pan, because this tends to make the chicken tough. Next time, I'll definitely try it with the marsala wine. Thanks for sharing!

Apple Cinnamon Oatmeal Bread

Reviewed: Sep. 16, 2006
This bread is delicious! My husband refers to it as "fall in a loaf". I followed the recipe exactly, except next time, I might use an 8x5 loaf pan so it will rise more. I used the whole packet of oatmeal on top but I found the loaf a little messy to cut because a lot of it fell off. Wonderful taste & texture, though!

Quick and Easy Cheese Bread

Reviewed: Sep. 16, 2006
This bread is very tasty! I followed the recipe exactly except I increased the milk to 1 cup as others suggested and used a combination of mexican & mozzarella cheese. It has a very nice flavor (not too sweet) and texture and didn't crumble at all. Next time, I might try an 8x5 pan because the loaf didn't rise very much and my baking powder was fresh.

Pasta with Fresh Tomatoes and Corn

Reviewed: Sep. 18, 2006
This was very good! I followed the recipe exactly (except I left out the fresh basil) and it had a great combination of flavors. It was also very easy to prepare. I'll definitely be making it again. Thanks!

Garlic Cheese Biscuits

Reviewed: Sep. 30, 2006
Wow! These were truly excellent! Very light & tasty and easy to make! I used Heart Healthy Bisquick and added 1/2 tsp. of garlic powder to the mix before baking, as others suggested. Instead of butter, I used Smart Balance and added 1/4 tsp. of garlic powder instead of 1/2 tsp. I will definitely be making these again!

Slow Cooker Mexican Casserole

Reviewed: Oct. 2, 2006
This was a pretty good recipe but the texture was a little "mushy" for my taste. I used ground chicken instead of sausage to lower the fat content. Otherwise I followed the recipe exactly. It was very easy to prepare and I'll probably make it again.

Apple Bacon Tomato Soup

Reviewed: Oct. 2, 2006
This soup has a very unique flavor. I made it exactly as written except I used turkey bacon instead of regular to lower the fat content and I used kidney beans instead of pinto. This recipe wasn't my favorite and my husband wasn't crazy about it, but I enjoyed it overall.

Wild Rice Chicken

Reviewed: Oct. 5, 2006
This was delicious! I couldn't stop eating it! As suggested by another reviewer, I sauteed the onion before adding to the rice mixture to give it a more subtle flavor. I used Cream of Chicken soup instead of Cream of Mushroom because of personal preference and I added some chopped broccoli. This was so easy to make, but it's nice enough for company, too. Thanks for a great recipe!

Creamy Chicken and Wild Rice Soup

Reviewed: Oct. 18, 2006
This was absolutely delicious!! I used 2% milk instead of cream and it was still very thick & hearty. I also used light butter instead of regular and it didn't seem to make any difference. I will definitely be making this again!

Delicious Ham and Potato Soup

Reviewed: Nov. 7, 2006
This soup was absolutely delicious - very rich, creamy & flavorful! It's more like a chowder than a soup. I followed the recipe exactly except I used turkey kielbasa instead of ham. My husband enjoyed it, too. I'll definitely be making it again! Thanks for sharing!

Broccoli and Cheddar Soup

Reviewed: Dec. 8, 2006
This soup was delicious and very easy to make! My husband isn't usually a fan of broccoli-cheddar soup, but even he liked it. I followed the recipe exactly, except I used reduced-fat butter and it was still very rich & creamy. The sharp cheddar really adds a nice flavor. Thanks for a great recipe!

Chocolate Mint Cookies I

Reviewed: Dec. 11, 2006
Wonderful recipe! These cookies remind me a little of Girls Scout Thin Mints. They were very easy to make and freeze well. I followed the recipe exactly except I was 2 Andes candies short, so I used chocolate chips on top for the last few cookies. I plan on taking them to a cookie exchange next week. Thanks for a great recipe!

Cream Cheese Sugar Cookies

Reviewed: Dec. 13, 2006
The flavor and texture of these cookies is really delicious, better than most sugar cookies I've tried. I followed the recipe exactly and did refrigerate the dough overnight. When I rolled it out, it softened to room temperature too quickly and didn't hold the sharp edges of the cookie shapes as well as I would have liked. Still a pretty good recipe, though!

Sugar Cookie Icing

Reviewed: Dec. 13, 2006
This recipe definitely needs to be adjusted. 2 teaspoons of milk was not nearly enough - I probably used close to 2 tablespoons. I also used a little more corn syrup than called for until the consistency was thin enough to spread with a knife. Once I got it right, I added green food coloring and used a knife to drizzle it over the cookies. It was prettier than I expected and hardened up nicely.

Almond Maple Granola

Reviewed: Dec. 28, 2006
This recipe went over really well with my family when they came to visit for Christmas. Everyone loved it! It's not too sweet and really delicious! I did cut back on the coconut and only used a 7 oz. package, which was still plenty. I wouldn't change anything else. Thanks for a great recipe!

Orange Pecan French Toast

Reviewed: Dec. 28, 2006
Wow!! What a great recipe! It's so convenient to prepare it the night before and pop it in the oven the next morning. The combination of orange, brown sugar & pecans was really unique and delicious. I followed the recipe exactly, except I used Italian bread instead of French. I wouldn't change anything else!

Chicken Marsala

Reviewed: Dec. 29, 2006
This is a wonderfully easy recipe! I followed it exactly, except I removed the chicken from the pan at the end and let the sauce cook down for another 10 minutes, which made it a little thicker. It was delicious and even rivalled the Chicken Marsala at our favorite Italian restaurant! I'll definitely be making this again!
