Mango Salsa

I've fixed this salsa for years except I use sweet red onion. It also goes well with pork tenderloin, or any pork dish, in place of applesauce. The longer it sits in the fridge, the better!

Spring Vegetable Soup

Great recipe. My advice is eat healthy. Way too much salt. Cut down by using low-sodium canned products when you can. 1 starch is all you need. Go fresh veggies all the way when you can. There is a lot of spices that you can sub for salt to get a great flavor.

Scott's Coast-to-Coast Famous Chicken Wings

Nothing secret about this recipe. I brine my wings for a day, then rinse so the salt content is not high. I use a K.C. rub and in the smoker for 2 hrs using applewood for smoke. Deep fry @375F for 8-10 minutes and toss is a chili sauce that is low sodium. Frank's is nothing but salt so I make my own sauce or buy a low sodium chili sauce. Now this is a secret, so don't tell anyone

Beef Yakitori

Good Recipe, until I came to the nutritional Info. 1800 plus mg of salt. I did not use soy sauce but subed Braggs Amino Acid instead. Recipe came out great. When we learn to cook without loading up on salt for flavor then we will cook healthy and know what " Scratch " cooking is all about. There is alot of herbs out there that are better tasting and good for us. And we don't neet the Goverment to tell us what to eat!!

Actually Delicious Turkey Burgers

Good recipe. This recipe, I left the salt out and used Mrs. Dash herbs and spices and everyone loved them. There are alot of spices out in the market place that do not have salt,which in my opinion is worse than fat.

Easy French Dip Sandwiches

A fair recipe. The sodium factor is a " Killer " At 2000+ mgs of salt, this is not healthy. You can make a scratch dip and improve this to a good and healthy meal. Take-out Chinese food is better than this for the old body.

Mexican Shrimp Cocktail (Hot for Gringos)

Good Recipe. There are many varations of Mexican Shrimp Cocktail. As for not being Mexican there is no standard when it comes to this recipe. In fact, I don't know how south of the border one reviewer has been, but I had this same recipe in Acapolco and no one complained. I guess you better add a chili pepper to it and have a shot of Silver Patron!!

Chicken Pot Pie IX

Great standard recipe.I made it as written first. I did tweak it the same day as I am cooking for the weekend.. I used no salt, low sodium chicken broth and unsalted butter. I used Mrs. Dash accorted spices. I also added garlic, brocoli, asparagas and artichoke hearts to the veggies. I made my own pie crust, as this is the real taste to a Pot Pie IMHO. It is great as written also

Flat Iron Steak with Balsamic Reduction

I use a cast iron skillet. I always get the steak to room temp and marinate in a vaccum sealer for about 45 minutes. If you do not have a vaccum unit, marinate for 2 hours in the frig and bring to room temp before cooking, al the rest is the way to do it. Great recipe.

African Chicken Stew

I like the authenticty of using a whole chicken. Seasonings and spices were good, I adjusted to taste. Using chicken broth instead of water is the right choice. All is well when cooked well. If you want to change up a recipe with subs, make your own recipe and NAME IT !

Pork with Peach and Black Bean Salsa

This is a great recipe. I try to stay away from can goods if I can. I have the time to make most items. I used my own salsa, cooked up some black beans and stole some peaches from my friends that I invited to dinner. The more that I read on food labels and nitrition convinces me that is where a lot of our health problems are. Enought said, Great Recipe.

Chicken and Sun-Dried Tomato Bruschetta

Great Recipe. I had just baked a Onion/Caroway Rye. I toasted it and used it instead of Focaccia . Great flavor. My wife added cream cheese to hers also. I used leftover smoked chicken from our weekend BBQ This recipe has many varibles and possiblities. this is what cooking is all about.
