Zesty Chicken Meatloaf

This was very easy and was good. I added chopped onion and used sour cream instead of dressing. I also used 2 pounds of chicken and increased the ingredients accordingly. There was a lot for leftovers. It is great re-heated!

Broccoli Chicken Casserole IV

This recipe was easy to make and I liked it but unfortunately my husband did not. I did substitute fresh broccoli for frozen as suggested by other reviewers and I did not have a problem with it being watery. I also probably at least doubled the cheese and used a blend of chedder and monterey jack.

Italian Meatball Sandwich Casserole

Delicious recipe. I did follow some reviewers suggestsions and cut the mayo by half and toasted the bread. It was still a little soggy so next time I will probably cut out the water. For those watching their waistlines - I used reduced fat cream cheese, low fat mayo and low fat mozzarella and it was still very good. Also, I didn't cube the bread, I sliced the bread into 1" thick slices to make it easier. I will definitely make this again. Thank you!

Cheesy Baked Cauliflower II

Beef Stew VI

Great recipe and good to freeze. I made changes based on other reviewers comments and my own tastes...I used 3lbs beef (my hubbie wanted more meat). Used 2 cans of beef broth over bouillon. Used 3 tbl starch/water. Coated the meat in a mixture of 7tbl flour, 2tsp garlic powder and 3tsp pepper. I omitted the celery and added 1 can peas and 1 can corn at the very end. Delicious.

Delicous and great to freeze. I used canned carrots and did not mash them just to save time. I also added a can of corn and worsteshire sauce. It was a hit!

Parmesan Chicken II

I love this recipe. Easy and delicious. I used skim milk instead of egg just to decrease the fat a little. Also took the skin off of the drumsticks. Still fabulous!

Baked Pork Chops I

This recipe was DELICIOUS! My husband doesn't really like pork but he asked me to put this one in the recipe file for keeps!! It was also easy to make which is key with a toddler running around. The first time I made it I forgot the white wine...it didn't matter it was great both ways. I also used condensed cream of mushroom soup with roasted garlic since it is lower in fat than the plain cream of mushroom soup. THANKS!!
