Insanely Amazing Jalapeno Cheese Dip

Fabulous! I opted to sub the mayo with cream cheese and sour cream like one reviewer suggested. Also, I had fresh jalepeno's, sweet banana peppers and habanero's so I sauteed them in butter with fresh garlic and finely chopped onion. Oh My Gosh! I cooked it in a cassarole dish and served it hot with blue corn chips, amazing. (I did drain the green chili's per reviewer suggestion). So I'm writing down my version of this recipe and handing it out to all whom stood around the cheese dip at my party and ate it until it was GONE!!!

Eggplant with Garlic Sauce

This is a great basic recipe. I followed the advice of a couple different reviewers and used extra soy sauce in substitute of oyster sauce. I added 2 tbs. chile sauce. Reduced sugar to 2tps., and used 3 cloves fresh garlic. I cooked rice and chicken and added 1/2 tbs crushed red peppers to that instead of eggplant. My skeptical husband LOVED it! ~~HINT~~ after sauteing the eggplant, add garlic and cook for 1 min. longer and then start adding water (veggie broth) about an 1/8 of a cup at a time. It helps make the absorption process go faster.

Best Brownies

I have truly found THE brownie. I did not change a single thing in the recipe, and they do turn out cakie on the outside and chewy on the inside, the perfect combo of textures. I have not tried them with the frosting yet because I'm still savoring the taste of the brownie itself! I'll eventually get around to trying the frosting tho. Happy Eating All!

Sweet Restaurant Slaw

This was great! I forgot to add the vegetable oil and it still turned out wonderful. I am making another batch for a family picnic and I will remember to add the oil this time! This is a keeper!!

Sunday Best Fruit Salad

I used all the ingredients listed except the peach pie filling, I chose to use a peach/mango preserve and WOW it was fantastic!! UPDATE*** I made this salad for a party the other day with a couple of changes. I used a fresh pineapple and Smuckers Apricot and Peach Preserves. I'm not exaggerating when I say people were calling their friends to come over and try it!!

Cranberry Nut Bread I

Although my bread came out a bit too tart but still very good, I must give this recipe the five stars it deserves. It is moist with just the perfect hint of sweetness. The next time I make it, I won't use to heaping cups of whole cranberries....maybe just one heaping cup...LOL!!!

Easy Enchilada Casserole

This is an excellent basic recipe. I say that because I used all the ingredients listed and added a few of my own to personalize the taste (don't we all, lol!!!). I took one reviewers advice and tore the top tortilla into pieces for easier cutting. All in all I am very pleased and will definitely cook this dish again!

Banana Crumb Muffins

WOW! Sweet and delicious. I prepared the ingredients as written only adding walnuts. I cooked it as a loaf (no muffin tin) @ 350 degrees for 30 minutes. I will definitely be making this again!

Easy Batter Fruit Cobbler

All I can say about this recipe is WOW!!!!! I'd give it more stars if possible. I tried it with fresh strawberries. I can't wait to try it with other fresh fruit this summer! Oh, I didn't have any butter on hand so I used Land O' Lakes stick margarine...obviously it worked. : )

Carrot Cake III

This cake is absolutely amazing! After reading some of the others suggestions, the only change I made was walnuts instead of pecans, 3 tbs. vanilla, 1/4 tsp. nutmeg and a brown/white sugar mix. The results, yum yum! I will be making this one over and over again. Thank you so much for sharing this with us. Oh, I used the Cream Cheese Frosting II reciped for this cake.....I highly recommend it!

Juicy Roasted Chicken

After reading many of the reviews, and then cooking this dish, I have come to the conclusion that as long as you use the margarine and celery the seasonings can be as personal as you choose and this dish is still amazing!!! I did not have onion powder so I used seasoned salt and garlic powder. Also, I used a 6 lbs. chicken and did NOT double the recipe. It still came out incredibly juicy and delicious!!!

Downeast Maine Pumpkin Bread

I have no doubt this recipe is delicious as written but being that I am trying to watch calories (who isn't lol!) I made a couple of adjustments. Like other reviewers, I reduced the amount of sugar to 2 cups. I only used 2 tbs. of oil and substituted the rest of the oil with a 1/4 cup unsweetened applesauce, 1/3 cup finely grated zucchini (unpeeled). I also added 1 1/2 cups raisins and 1 tps. allspice. I also used 100% stone ground non GMO whole wheat (Hodgson Mill). It is absolutely fantastic!!! This recipe is a keeper, thank you Laurie!

North Carolina BBQ Sauce

I really liked this recipe. The only thing I did differently, was I halved the amount of cayenne and black pepper it called for and added 2/3 cup of brown sugar (made the recipe based on 10 servings). I slow cooked a 5lb. pork butt roast, added the sauce it was delicious. Next time I make this sauce I'll use 3/4 of the cayenne and pepper it calls for. I like it hot!!!

Awesome Slow Cooker Pot Roast

I used a bottom roast for this recipe because it was all I could find in the store. I don't think it was the right cut to use. It was a bit dry and not as tender as I would have liked it. BUT, the gravy turned out really good. The boyfriend loved the entire dish, said it tasted like his mom's used to...so that alone is worth 5 starts. Next time, I will try a different cut of beef. The only variation I made to the recipe was adding a half an onion. Also, I froze the remainder of the gravy/broth for another day.

Angie's Dad's Best Cabbage Coleslaw

Loved this coleslaw!!! It goes perfect on a spicy North Carolina pulled pork BBQ sandwich. Thanks for the recipe it's a keeper!!!! Oh one thing, I didn't have a red onion so I used a yellow....it works just fine but next time I'll use a red!

Manhattan Clam Chowder

***A TIP*** If you are lucky enough to have fresh clams or better yet Quahogs, for this recipe, try freezing the clams before using them. They will open once they are frozen. Just remember to thaw them over a container so you do not lose any of the juice...happy eating!!!!
