Stuffed Green Peppers I

I didn't follow the recipe exactly as written, but close enough to give this 5 stars. I added fresh garlic, precooked the rice and mixed in the shredded cheese before I stuffed the tomatoes. Also like other reviewers suggested, I used diced tomatoes with jalapeño. My husband loved it, and so did I!

Downeast Maine Pumpkin Bread

I have no doubt this recipe is delicious as written but being that I am trying to watch calories (who isn't lol!) I made a couple of adjustments. Like other reviewers, I reduced the amount of sugar to 2 cups. I only used 2 tbs. of oil and substituted the rest of the oil with a 1/4 cup unsweetened applesauce, 1/3 cup finely grated zucchini (unpeeled). I also added 1 1/2 cups raisins and 1 tps. allspice. I also used 100% stone ground non GMO whole wheat (Hodgson Mill). It is absolutely fantastic!!! This recipe is a keeper, thank you Laurie!

Insanely Amazing Jalapeno Cheese Dip

Fabulous! I opted to sub the mayo with cream cheese and sour cream like one reviewer suggested. Also, I had fresh jalepeno's, sweet banana peppers and habanero's so I sauteed them in butter with fresh garlic and finely chopped onion. Oh My Gosh! I cooked it in a cassarole dish and served it hot with blue corn chips, amazing. (I did drain the green chili's per reviewer suggestion). So I'm writing down my version of this recipe and handing it out to all whom stood around the cheese dip at my party and ate it until it was GONE!!!

Eggplant with Garlic Sauce

This is a great basic recipe. I followed the advice of a couple different reviewers and used extra soy sauce in substitute of oyster sauce. I added 2 tbs. chile sauce. Reduced sugar to 2tps., and used 3 cloves fresh garlic. I cooked rice and chicken and added 1/2 tbs crushed red peppers to that instead of eggplant. My skeptical husband LOVED it! ~~HINT~~ after sauteing the eggplant, add garlic and cook for 1 min. longer and then start adding water (veggie broth) about an 1/8 of a cup at a time. It helps make the absorption process go faster.

Roasted Beets and Sauteed Beet Greens

WOW! This dish is incredible. I followed the advice of some of the other reviewers and added potatoes and carrots to the beets. I love onion so I added more than the recipe called for. Everything in the dish came from my CSA except for the carrots which were organic. So it was a fresh and delightful dish. Definitely going in my permanent recipe file. Thank you, thank you for this super recipe!!!!

Roasted Swiss Chard with Feta

Overall, this is a really good basic recipe. I will definitely be cooking it again but with a couple of tweaks. I only had a tiny bit of feta cheese on hand so I will try it again with the correct amount. I would also like to try it with garlic.

Best Brownies

I have truly found THE brownie. I did not change a single thing in the recipe, and they do turn out cakie on the outside and chewy on the inside, the perfect combo of textures. I have not tried them with the frosting yet because I'm still savoring the taste of the brownie itself! I'll eventually get around to trying the frosting tho. Happy Eating All!

Tiffany's Chocolate Chip Cookies

I'm not crazy about the slight cinnamon taste of this cookie. I love cinnamon, but it just doesn't seem to blend right in this case. Also, probably my fault, but the cookies were more like wafers. I tried refrigerating the dough and changing the cooking time but nothing helped. The only thing I can think that I might have done wrong was sifting the flour before measuring it? So I am still searching for the best chocolate chip cookie recipe.

Quinoa Veggie Salad with Zesty Vinaigrette

This dish is delicious! I took the advice of some reviewers, and only used two cups of quinoa/two cups water. I added orange/red/yellow bell pepper for color. And lastly, I sprinkled feta cheese into the salad. It is so very good! The only reason I did not give this dish the full five stars is because of the 'fat factor'. I felt so guilty using all that oil! I used 1/2 olive oil and 1/2 cup smart balance. The next time I make this, I am going to experiment with a 'lighter' version of the dressing. Overall, I highly recommend!

Sunday Best Fruit Salad

I used all the ingredients listed except the peach pie filling, I chose to use a peach/mango preserve and WOW it was fantastic!! UPDATE*** I made this salad for a party the other day with a couple of changes. I used a fresh pineapple and Smuckers Apricot and Peach Preserves. I'm not exaggerating when I say people were calling their friends to come over and try it!!

Corned Beef and Cabbage I

This recipe worked well. I did cook my brisket in water and the veggies turned out just a bit bland. Next time I will try using beef broth as suggested by other reviewers. All in all a good recipe that I will use again.

Cranberry Nut Bread I

Although my bread came out a bit too tart but still very good, I must give this recipe the five stars it deserves. It is moist with just the perfect hint of sweetness. The next time I make it, I won't use to heaping cups of whole cranberries....maybe just one heaping cup...LOL!!!

Fabulous Fruit Salad

I made this fruit salad for a recent party and it was very good. This is a dish that should be eaten as soon as possible after being put together and I do not recommend making more than can be eaten within a 48 hour period, fruit is not cheap and a shame to waste.

Wow! Definitely a keeper! Next time I will cut back just a bit on the brown sugar and molasses, and try the crockpot version, but that's it!! Thank you so much for this delicious dish!
