Cranberry Sauce

Reviewed: Nov. 28, 2008
A five star rating to me is one that needs no tweaking of a recipe. I had to add an additional 3/4 cup of sugar. The one cup just makes it way to tart! I must admit that I did receive more compliments one this recipe than on my usual which doesn't include the orange juice. After the addition of the sugar, it was very good!

Beth's Spicy Oatmeal Raisin Cookies

If I could have given this recipe a million stars I would have!! By far the best cookie recipe ever! I added chocolate chips and thought I would die of pure ecstasy right there on the spot! Believe me, you want to try this recipe!

Baked French Toast

Reviewed: Oct. 15, 2007
A true 5 star recipe is one you do not have to tweak in several areas. It is not just a matter of taste, but does the recipe correctly instruct you toward perfectly proporioned ingredients that gives you a truly delicious dish. This one DEFINITELY does not do that. I had a soggy mess! I tried to pour the excess liquid off just to lose the shape of my bread. It was so soggy the bread could not hold together and some of it fell into the sink along with the excess mixture. You will get no crispness from the bread if you pour the brown sugar mixture over the top at the beginning. I baked it for 20 minutes and then added the brown sugar mixture. I am totally disappointed in this recipe. I spent in excess of 30.00 on this just to find neither my husband nor I liked it! If I had wanted bread pudding for breakfast, which is what it was somewhat like, I would have looked up bread pudding. Whoever heard of eating bread pudding for breakfast anyway?? Make at your own risk is all I can say!

Easy Tuna Casserole

Reviewed: Sep. 17, 2007
Hey, y'all! My family LOVED this recipe! It is absolutely comfort food! I did take most of the suggestions of "Martins" on page 3 of the reviews. I used 1 can cream of chicken soup, 1 can cream of mushroom, 1 (2 cup) package of velveeta cheese and about a half cup of milk. I did use seasoned bread crumbs mixed with butter on top instead of the onions. I did sautee onions in butter and added them at the beginning to the soups. I used 1 tsp of garlic powder, also. I did bake it for 45 minutes. Delicious!!

Chicken Fried Steak I

Reviewed: Sep. 10, 2007
Hey, y'all! Being a true southern gal I can tell you this is truly fantastic chicken fried steak! The only thing I did differently was use Lawry's Seasoned Salt on cube steaks. I cut the cube steaks up and made "Chicken Fried Fingers". Kids love it like that. Excellent with dipping sauces, too if you aren't in the mood for gravy.

Classic Red Beans N Rice

Hey, y'all! These are definitely southern pintos! Fantastic! The only thing I did differently was use 6 slices of hickory smoked bacon instead of the ham hocks. What a great mixture of flavors! Don't leave out the bay leaves! It gives that great "What is that?"

Holiday Chicken Salad

Reviewed: Aug. 1, 2007
Hey, y'all! Loved this chicken salad! I made it for a luncheon and got rave reviews!! I added a bit more onion simply because I love it! I also used a roast chicken and saved on time. Other than those simple tweaks I left it as is and it was great!

Hey, y'all! I loved this recipe! I also added an extra can of Rotel to give it the consistency I was looking for. Great for potluck dinners at church because it goes so far!

Sour Cream Cucumber Salad

Hey y'all! I loved this salad, BUT I have to agree with the other reviewer that said it needed just a little more of something. I took their advice and I added 2 tablespoons of Ranch dressing and we all loved it!!

Broccoli Cheese Soup IV

This was wonderful, especially on a cold day! I did tweak the recipe to make it low carb. I used half and half instead of milk. I added 1 teaspoon garlic powder. I also added roasted chicken, just to "beef" it up a little. Incredible!

Awful! Next time (if there is one) I will use spicy sausage and more. Very bland. Too much of a plain biscuit taste!

Quick, easy and good! Line your cookie sheet with foil though because this does make a sticky mess at cleanup time!

How anyone could give this anything but five stars, I will never know. My son is the pickiest eater on the face of the earth and I couldn't bake these fast enough for him! These cookies are now permanently on my Christmas and year round cooking list!

Cranberry Sauce I

I tweaked this just a bit. I tasted it ahead of time and it was too tart for me. I simply added another cup of granulated sugar and simmered for 20-25 minutes. Delicious!
