Pumpkin Casserole

I tried this as written and my family thought it was "okay". This is definitely something dessert-ish, though. Nothing that I would serve WITH dinner. On a second thought, I tried it again, but with my own twist: First I 86'd the canned pumpkin and opted (since it is Halloween) for a fresh, medium, pie pumpkin. I sliced it in half, scooped out the seeds (of course reserving them for toasting later), put the 2 halves on a cookie sheet with just enough water to cover the bottom and baked them in the oven @ 350 for about 45 minutes (as if making squash...yanno, because it IS a squash). Then, once it was fully cooked and cooled, I quickly peeled it and threw it in a bowl for the next step. Second: I got rid of the evaporated milk. I could distinctly taste it in the first dish and well, it tasted like tin. Instead I used 1/2 heavy cream and 1/2 skim milk. I also used 1/2 c. sugar, omitted the salt, 1/2 the butter, and more cinnamon. DELISH! It was so light and airy and was like a mousse! It was devine! Still not savory, not too sweet but just right. If you've never had fresh pumpkin before, this is a great recipe to try it in. You'll never go back to the canned stuff!

Churros

This is a really great recipe....for funnel cake. I tried it twice and everyone agreed that it wasn't bad, but it wasn't churro either. I think I'll keep looking.

Burrito Pie

This is a really good recipe as-is. For me though, I prefer to use it as a base to do my "throw-it-in-and-see-what-we-get" thing. For my family, I skip the jar of taco sauce, add 1 1/4 (or so) cup of chunky salsa and 1 pkg of taco seasoning. I also skip the cans of refried beans and packaged tortillas and use my own homemade variety. Because I make my tortillas a little thicker, I haven't had a problem with soggy tortillas or mush-mush. Then, for garnish after it's done cooking, thrown on some sliced green onions and put out fresh lettuce, tomato and extra black olives as sides for my family to add to their plates. We have this meal at least 3x's a month. It's really quite good.

Guacamole

I made this about 20 minutes ago for tomorrow's family dinner. I must say that it is certainly pretty, but perhaps next time, I may double it! I also didn't have any limes on hand so I used 1 teaspoon of lime juice from concentrate (those little green limes you get at the supermarket). I also skipped the cayenne and added a chopped and seeded jalepeno. I tasted it and it was pretty darn good! Definately a keeper!

All-Day Apple Butter

I really liked this recipe, but thought it was a bit too sweet. Next time I'll reduce the sugar. Also, after having it cook all day, it was still pretty chunky, so I just mushed it up with a hand potato masher. I actually enjoyed it a little bit chunky. My house smelled amazing for days!

Sweet Honey French Bread

I didn't particularly care for this recipe. The loaf was VERY small, maybe just over half the height of my 1.5 lb. bread machine canister and didn't taste like anything that was put in it. I think I'll try other recipes.

Apple Maple Crumble Pie

This was a good tasting recipe, but it was VERY watery, even after adding 3 heaping tablespoons of flour, above what the recipe called for. I think I may increase the flour an additional 1/4-1/2 cup to absorb the liquid.

All American Apple Pie

This was the FIRST apple pie that I made that didn't turn out to be "swimming" in juice! OMG-- it was sooooo good! I must admit that I used the recipe for the filling only, and cheated by using a premade pie crust... and I did end up baking it for quite a bit longer, but even still! It turned out beautiful, tasty, and is now my family's favorite pie!! I'll be proud to put this on the table for Thanksgiving!!

Wedding Cake Frosting

WOW! I am so impressed with this frosting! I made it exactly as written with the exception of "white" ingredients (i.e., vanilla and shortening). I did have shortening, but it's butter flavored (the only kind I buy) and so the frosting didn't turn out white. BUT WHO CARES?! I was going for taste, not look. I handed a beater to my husband and his eyes about popped out of his head because he loved it so much! My only qualm is that this makes A LOT of frosting... I mean A LOT. So, I'll use what I need for a birthday cake and then tomorrow I'll whip up a spice cake, add a little cinnamon or pumpkin pie spice to the frosting and use some there. I still think that I'll have some left and if I do, I'll probably add some lemon extract and yellow food coloring and put it on a lemon cake and give it to the neighbors! Next time I think I might scale it down a bit. Overall... easy, fast, wondeful texture, tasty and holds up well!

Portuguese Sweet Bread I

OH MY GOSH!! This bread is OUTSTANDING! I made this for the first time last night, and embarrassingly enough, my husband and I devoured it before it even cooled down! He begged me for another loaf, so as we speak, it's being made. I did put it in the oven 350 degrees for about 35 minutes (not 20 minutes)as suggested by other reviews, and it turned out beautifully. I brushed it with butter and let it get golden brown and am salivating just thinking about it!! LOVE THIS RECIPE!!!!

Blueberry Buckle

4 stars for TASTE ONLY. Yes, it was easy, looked pretty and was tasty....BUT--- It was really soggy in the middle while the edges cooked to almost burning. I'll make it again, but perhaps use different bakeware.

Corn Dog Muffins

These were so EASY and FAST! I didn't use packaged cornbread (YUCK!) and just made it from scratch (5 minutes), then added the hotdogs. The first time I made these, my DH and DD said that there weren't enough hot dogs. I made a double batch today (for the freezer)and decided to slice the hot dogs length wise and then cut each of those pieces length wise again, and diced. A dropped lots of hot dog pieces over each muffin batter cup and then gently stirred it in with a spoon. DELISH! A little more time consuming, but worth the effort!

Turkey Sloppy Joes

This was pretty good, but nothing like the stuff out of the can... which is a good thing! First I made it as is and tasted it. It wasn't as saucy as I had hoped, so I added an additional 1/2c. ketchup and 1/4 bbq sauce. It turned out beautifully and tasted delish! This recipe gave me 8 servings not 5, which was perfect!

Oven Fried Chicken III

This was VERY tasty, and the breading looks beautiful on the chicken. I took the advice of another and used a wire cooling rack on a cookie sheet to bake the chicken thinking it'd be nice and crispy. Well, that didn't happen. I ended up with a "graham crackery" breading that was soft and came off when cutting the meat. Disappointing. I may try it again, and add a little olive oil to the breading and hope that it crisps up under the broiler.

Taco Salad III

This is pretty close to how I remember it from when I was little. I thought I would make this for my daughter and her girlfriend, but they didn't like it as much as I had hoped. I'm not sure what it is, but it's VERY sweet. I'm assuming that Catalina dressing over the years has really changed because I don't remember it being this sweet. Then again, that may have been the reason why I loved it so much when I was little! I'll keep it and tweak it to our family's taste with some thousand island mixed in to cut the sweetness! Thanks!!

Cheese Herb Bread

I'm giving this 3 stars because I just pulled this out of my machine and the middle has sunken in and it just looks terrible... smells WONDERFUL... but looks like a disaster. I'm going to attempt this recipe again in a few days once I turn this loaf into some texas toast. I'll update in a few days...

Egg Casserole

This is a keeper! Simple, quick and YUMMY! It's a great recipe as is, but we'd like to try it with some other variations and added ingredients to make it "omlette style"! ***Made this the night before and reheated it in the oven for Sunday breakfast... PERFECT!!!

Bread Pudding II

I am only giving this 4 stars because it was a little to eggy in the middle. I used left over home made bread from my machine and thought that 7 pieces of that would be plenty to absorb the egg. Apparently, it wasn't! I also used a full tablespoon of cinnamon and a pinch of nutmeg. We're huge cinnamon and vanilla fans so I also upped the vanilla to a full tablespoon! Lucky for me, I had a mixed bag of golden raisins, dried blueberries, and dried cranberries. I threw in 1/2c. of that and it was beautiful!! We ate around the middle and now, about 15 minutes after baking it, it's all gone! This a keeper for me! Next time I'll just use 3 eggs instead of 4! Super tasty, super quick, and a super good way of killing those cravings after dinner! YUM-O!!

White Bread For The Bread Machine

This turned out very tasty. My only problem was that it over-rose in my machine and stuck to the top of it. It wasn't that serious of an issue. Perhaps, I'll just lower the temp of the water the yeast steeps in. Other than that... it was great with dinner tonight and I am in the process of turning the rest into bread pudding! YUM-O!
