Mama's Italian Wedding Soup

Very good soup. I added mushrooms and used escarole instead of spinach. Also used whole wheat pasta. Excellent for a low calorie meal. Be sure to use extra lean meat !! This is the 2nd time I've made it and its perfect

Escarole and Beans

Always excellent...BE SURE to cut off the tough stems and cut the escarole in smaller pieces. Try cutting up pieces of pepperoni in it WOW.

Coconut Cream Cake I

OUTSTANDING!! I did a yellow cake mix and added a box of coconut creme pudding to the mix. Also added mini semi-sweet chocolate chips to the batter. RAVE REVIEWS. Everyone thought there was some type of liquor in it. That's how tasty it was. Will defintely make again. Used cream cheese frosting instead of cool whip and topped with coconut..

Marinated Rosemary Lemon Chicken

I'm not a chicken lover but I have to say this was GREAT!! I marinated the chicken breast in lime and lemon juice, added just a bit of garlic powder and onion powder. Unfortunately, I forgot to add the rosemary which I will do next time. Even without the rosemary, it was fantastic. Baked it in my toaster oven and PERFECTION !!! UPDATE: Did it again and used a tad (and i mean a tad) of tarragon instead of rosemary. Put everything in a zip lock bag the night before because the chicken was still frozen. OH MY GOD. I dont like chicken but this is a MUST!!!

Maria's Broccoli Rabe

First of all, remove stems, all you want are the leaves and the flowerettes on the top. Boil in salted water. Remove. You can either saute this with garlic and olive oil, or parboil then finish cooking in broth. Add a can of cannellini beans or dark red kidney beans. Be sure to use fresh garlic. A little onion powder and a bit of salt and pepper and you have a low calorie, very healthy meal.

Homemade Tomato Sauce II

Very close to authentic Italian sauce, but you need to add lots of fresh basil and use ONLY olive oil. A tiny bit of sugar is needed to cut down the acidity.

Hamburger Steak with Onions and Gravy

I just fried the burgers til almost done then added 2 cans of brown gravy along with the sauteed onions. No loss of flavor. Didnt need the sherry. Mushrooms are always a plus. Awesome, fast meal with mashed potatos and corn.

Fresh Vegetable Soup

I did not use green pepper or the onions. Added mushrooms, eliminated the bay leaf (didnt need it). Added frozen broccoli. Let it simmer for about 1 1-2 hrs then pureed it, adding more liquid so it wouldn't be too thick. Some tabasco sauce and LIME juice. Excellent. Be sure to add lime juice, it really makes the difference.

Excellent. Word of advice...do NOT add onions and garlic. Also, mozzarella cheese is not authentic in this recipe. Do not use bacon instead of prosciutto

Roasted Potatoes with Tomatoes, Basil, and Garlic

Had to double the recipe for a big dinner. Used garlic powder instead of fresh garlic and did not add the rosemary. I did add some sesame seeds which gave it a wonderful taste. Obviously, cooking time was longer. Very tasty
