Overnight Blueberry French Toast

My husband and I made this for the morning after Thanksgiving. The blueberry syrup was excellent, my husband loves blueberries so he loved this. But the french toast was very "eggy" and there was not enough blueberries or maple syrup to make it sweet at all. It was good but not quite a "keeper". But, we decided to save it until we have kids and see what they think. I think kids would like this.

Pumpkin Crumb Cake

We made this and loved it, it was even better after refrigerating it overnight! The only thing is my topping didn't quite turn out. I will make sure the butter is very COLD and cut it in with a pastry blender next time. But even without the topping, this was a great treat!

Cookie in a Jar

I made 24 of these for Christmas presents, they turned out great and were easy! I changed the order a bit, I put the flour on the bottom (pack it down!), then just kept the colors separate. I also made sure the white sugar was on top of the brown sugar, that way it didn't "leak" into the other ingredients. Everyone loved them and the cookies are yummy too!

Slow Cooker Taco Soup

A "keeper" said my husband, we loved this. I did use the ranch packet and I also pureed the tomatoes so we didn't have big chunks. I added about a tsp. of vinegar and LOTS of tobasco. We wanted it a bit thicker so for the last hour, I turned it up to high and took the lid off. This was delicious, we will definitely add this to our favorites!

Cajun Chicken Pasta

Wow! This was fantastic! I even cheated on a couple things. I used 1/2 can cream of mushroom soup and enough milk to equal the amount of cream it called for. And the only other seasoning I added other than the cajun seasoning (use more!) was some fresh minced garlic. I tossed everything with fresh grated parmesan...mmmmm, very good!

Banana Banana Bread

Yummy! This was a big hit at our house. We make lots of banana bread and I've been looking for THE recipe and this is it! We did add vanilla, I will do one cup of brown sugar next time and add nuts. This is a great recipe, great flavor and texture!!

Mexican Rice

This was excellent! Threw it together in a snap and served it with our fajitas. Next time I will use one can of tomato sauce and less water. Just a personal preference! This will definitely be a staple on "Mexican Night" at our house!

Mini Cheesecakes I

I'm in charge of dessert for our family Sunday dinners. My mother-in-law told me I had outdone myself this time! Thank you! I made these in regular size muffin tins and cooked them a bit longer. They were YUMMY!!

Peanut Butter Temptations II

The whole family loved these! I need to experiment on ways to make them look better. The sides of the cookie ended up quite a bit higher than the peanut butter cup after everything cooled. It didn't seem to bother anyone who was eating them though! Very tasty and soft cookie and it all worked great together!

Navajo Fry Bread II

Worked great! But my dough was very sticky (I scaled the recipe, maybe that's why), so I let it sit in a bowl coated with oil with oiled plastic wrap on top for about half an hour. It's easier to handle that way and allows it to "rest". Next time I will use about 1/3 less salt to fit our taste. Very good as Navajo Tacos! YUM!

Lemon-Lime Cream Tart

Wonderful! Like key lime pie but without all the fat. No one knew it was low-fat! The crust is a little different, using egg-white instead of butter made it more crunchy but everyone approved. I just spread the whipped topping all over the top and grated a little lemon and lime zest to finish it off. Great presentation and tasted heavenly. Definite "keeper"!
