Danish Meatballs with Dill Sauce

Meatballs were a bit bland, I would add a little cracked pepper and a little bit of season salt additional. The sauce was great and made up for it. Great recipe

Mincemeat Cookies

Two things to enhance this FANTASTIC recipe that changed the way I view mincemeat. I skipped the cream for the frosting and went with real rum for the frosting. VERY GOOD!

Banana Crumb Muffins

This was a fantastic recipe. I changed them into jumbo muffins by doubling the recipe and then adding about 10 minutes cook time. My family loved them! We didn't have light brown sugar so I used dark and it was almost like a carmel topping. They also froze wonderfully.

Best Ever Caramel Apple Crisp

This truely is the BEST EVER APPLE CRISP!!!! I did save some time with cleaning the pan by lining the pan with the new no-stick renyolds foil. I ended up making this three times in one week everyone ate some much of it!!!

Banana Banana Bread

I really like this recipe and loved it even more when I put a dark brown sugar, flour, butter and cinnamon crumble on the top of the bread. It's like a Carmel Banana bread. Delicious!

French Crepes

My father used to make these for everyone for Easter breakfast (about 40 family members) and sadly he passed away unexpectedly without ever sharing the recipe with any of our family. I was chosen to be the be the chef for this year and picked this recipe because it looked very similar to what I remembered him putting in the bowl. Excellent recipe that didn't disappoint. He would have been proud of me. I only added some maple syrup flavoring or vanilla in my batches. Everyone loved them. I also coated the pan with a light coating of crisco & a little pat of butter (for flavoring). The edges came out crispy and delicious!

These were good, although I chose to use eye of round steaks, which I wouldn't do again. If you are going to go through the trouble to make this... make is the right way.

Chicken Avocado Casserole

This is a fantastic unusual recipe. We used a lower fat version by using benicol butter and fat free half and half. Great flavor and even my 9 year old enjoyed it.

Pecan Pie V

The will be the pie I make from now on!!! My family loved it. It fools you because when it comes out of the oven, it looked like it may have the texture of cake, however, one cut into it and a fab textured nut mix slightly similar to traditional pecan pie is enclosed - only it's better!!!!

Easy Morning Glory Muffins

Extremely delicious, filling and delightful! They are moist, delicate and hearty at the same time. I made them in the large muffing tins and then froze them individually. Pop one in the micro for 45 seconds as you pour your coffee in the morning and you've got yourself a delish breakfast on the go that's good for you too!

Caramel Popcorn

Honestly the best & easiest caramel popcorn ever! I hand popped about 1 cup of popcorn on the stovetop to make this recipe. I only needed to bake for 15 minutes, turned then another 15 minutes and it was perfect. I also used the leftover carmel and let if sit for a moment before spooning it into wax paper, rolled & cinched the edges to make caramel candies. FANTASTIC recipe. My whole family loved it!

World's Best Lasagna

My Son & Husband loved this recipe. It really has TONS of flavor. My only change was to use a mix of sweet and spicy sausage. I didn't have the complete time to simmer the sauce and it still tased delicious.

Easy Paella

This recipe was fantastic... I did substitute tumeric (spelling?) for the saffron (1 tsp.) as I wasn't about to spend $20 on four threads of saffron... one day I will though. I also did feel that it wasn't necessary to add oil to the pan when cooking the chicken as the marinade had plenty already. Lastly I did keep draining the fat off of the meats as it did get pretty greasy from the chorizo. My whole family loved it. Not real spicy but did have a good kick to it.

Jesse and Steve's Fresh Strawberry Cake

I made the cake "as is" and put it into two 8 inch cake pans to make a double layer because my mother-in-law is allergic to processed sugar. The cake itself is not bad, but not super either. It is very heavy and the grainy as the sugar doesn't melt very well. I also had the problem of the middle of the cake not cooking all the way. I had to put it in longer and thought it was going to burn. Suprisingly it didn't, I think the sugar makes the cake look very dark, but it is a very moist cake. I tried to improvise on the frosting by making a lemon juice & zest glaze. (Skipped the almonds after trying a bite, it just didn't seem to fit) I really liked the combo of the strawberries and lemon and would have given this a higher rating if I could figure out how to A. work on getting the sugar to melt somehow so it's not so grainy and B. figure out how to lighten the cake a bit so it's not so heavy. I do think that this could make a great tea time cake though with a little work.

To Die For Blueberry Muffins

Seriously the best blueberry muffin I have every had. My whole family bought me more blueberries to make more! I made them in the super sized cups and was able to freeze my extras and they are just as good later. If you double, you don't need as much topping - I think you could have even stayed with the original size and had enough to cover a double batch.

Mushroom Chicken Dijon

The only thing missing from this recipe is flavor in the sauce. I added sauted onion & garlic with a pinch of dry mustard and it was much better.
