Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Reviewed: Aug. 26, 2006
I have to say I REALLY loved these muffins! I did sprinkle a little brown sugar on the top before baking. They are light - healthy - and very tasty. I am a firm believer that every muffin deserves butter slatheres over it while warm prior to eatting - I can happily say - I never needed a drop. Wonderful recipe. My 9 year old son loved them too. I would imagine this as a great quickie breakfast.

LauHilLau Cookies

Reviewed: Aug. 26, 2006
I really loved these cookies. I made them for Christmas as a great alternative to the cookie cutter cookie. They went over wonderfully. I did cook them in a 9 x 13 pam vs. cookies. I didn't have a crumb left after Christmas Eve and needed to make more for my family Christmas Day. They are slightly sticky after cooking, so make sure you wax paper if stacking.

Did everything exactly as written and was absolutely not disappointed. This is an excellent and somewhat healthier than other cookies receipe for the apples we picked at the orchard.

Danish Meatballs with Dill Sauce

Reviewed: Oct. 15, 2006
Meatballs were a bit bland, I would add a little cracked pepper and a little bit of season salt additional. The sauce was great and made up for it. Great recipe

Green Salad with Cranberry Vinaigrette

Reviewed: Nov. 26, 2006
I personally didn't care for this recipe. All of the ingredients made it sound like it would be good, but felt it lacked more flavor.

Grandma's Green Bean Casserole

Reviewed: Nov. 26, 2006
This recipe really bombed on all of my family for our thanksgiving dinner. Not one person liked it and we followed the recipe to the tee. It didn't taste anything similar to the traditional dish. It lacked the mushrooms and flavor.

A great alternative to plain pumpkin pie. So delicious, I didn't even want to put whipped topping on it!

Pecan Pie V

Reviewed: Nov. 26, 2006
The will be the pie I make from now on!!! My family loved it. It fools you because when it comes out of the oven, it looked like it may have the texture of cake, however, one cut into it and a fab textured nut mix slightly similar to traditional pecan pie is enclosed - only it's better!!!!

Baked Spaghetti Squash Lasagna Style

Reviewed: Nov. 26, 2006
My husband was very sceptical, but needs to watch his cholesterol. He askes for it all the time now. What a nice alternative! I actually like it better than traditional lasagna. You don't have that heavy feeling in your stomach all day after you eat it. My husband says this is "Super Delicious!"

Chicken Avocado Casserole

This is a fantastic unusual recipe. We used a lower fat version by using benicol butter and fat free half and half. Great flavor and even my 9 year old enjoyed it.

French Crepes

Reviewed: Jul. 28, 2007
My father used to make these for everyone for Easter breakfast (about 40 family members) and sadly he passed away unexpectedly without ever sharing the recipe with any of our family. I was chosen to be the be the chef for this year and picked this recipe because it looked very similar to what I remembered him putting in the bowl. Excellent recipe that didn't disappoint. He would have been proud of me. I only added some maple syrup flavoring or vanilla in my batches. Everyone loved them. I also coated the pan with a light coating of crisco & a little pat of butter (for flavoring). The edges came out crispy and delicious!

Mushroom Chicken Dijon

The only thing missing from this recipe is flavor in the sauce. I added sauted onion & garlic with a pinch of dry mustard and it was much better.

To Die For Blueberry Muffins

Reviewed: Jul. 28, 2007
Seriously the best blueberry muffin I have every had. My whole family bought me more blueberries to make more! I made them in the super sized cups and was able to freeze my extras and they are just as good later. If you double, you don't need as much topping - I think you could have even stayed with the original size and had enough to cover a double batch.
