About this Cook
I was born and raised in So California. I moved to Maui for a few years with my at the time boyfriend. We were married on the beach there and have been married for just over 17 years. We now live in the eastern Midwest (but a big part of me stayed in Maui, I love it there)I am a mommy of young twins.AKA Chef, Chauffeur, Referee, House Keeper, Accountant, HAPPY! I love horror films...yes even the cheesy ones.;) Halloween is my favorite holiday. Fall is my favorite season. Anne Rice is my favorite Author. I love to cook, bake and scrapbook. My kids rock and keep me going.
My favorite things to cook
Mexican food but Italian is coming in as a close second.

Anything my Grandma passed down to me. She was a great cook who loved it.
My cooking triumphs
My kids wonderful Birthday cakes. A Princess, a pirate, a Wizard of Oz cake complete with rainbow center, Skate Board, treasure chest,dyno. NO fondant and no molded cake pans! ha I love seeing there faces when they see I made them what they wanted.
My cooking tragedies
FLAT HARD AS A ROCK BREAD! ha It took me a long time to get the hang of it. I still struggle with a good pizza crust. I like a airy yeasty crust. One time will be good, then the next ok,the next yuck. I just cant get it consistently right.

Grandma's Lemon Meringue Pie
Great recipe. Easy to make with great results. It was gone in no time. I used the zest and juice from three medium lemons. I also added 1/2 tsp cream of tartar to the egg whites. I might double the meringue next time since I like it mile high. I am also going to make this with lime in place of lemon and see how it turns out.

Roasted Pears with Caramel Sauce
Easy and impressive. This would make a great dinner party dessert. I topped with whipped cream.

Cream Cheese Jalapeno Hamburgers
YUM YUM YUM!!! Any Jalapeno popper lover HAS to try these! I used fresh chopped jalapenos and they gave the burgers amazing flavor. Not the easiest patty to form and can get messy trying to flip on the grill but O-M-G...SOOO worth it. I can not believe these are not on restaurant menus everywhere!
