Baked Ziti IV

At my fiance's request, I made baked ziti. This recipe was easy to follow and turned out delicious. He loved it. I will definately make it again. I used more sauce than called for and substituted turkey meat products, and it was wonderful.

Corn Chowder II

I really liked this recipe. Super easy and quick. I changed a few things based on some other reviews and ingredients on hand. I sauteed the onions in bacon fat, I used red onions, I used at least least twice the sherry and I used hot sauce instead of cayenne pepper. Also double the corn and used about three cups of milk. Cheddar instead of Monterey Jack. It seems like I changed a lot, but this was a great base. I also added medium shrimp to the chowder to make it a meal and served it with french bread.

Spicy Mango Salsa

This recipe is very tasty. I was looking for a sweet and spicy topping for chicken. This fit the bill wonderfully. The mangoes and peaches I used were not very sweet, so I added about two teaspoons of sugar. I used a pinch of ground ginger, pinch of salt too. Jalapenos instead of Serrano peppers and cilantro instead of basil. It takes a while to chop everything up though, but worth it. I let it chill about three hours and didn't feel like cooking the chicken by then, so I made turkey wraps with cream cheese on tortillas and added the salsa. Delicious! Will definately make again.

Easy Key Lime Pie I

I tried this recipe using Key Limes (took forever to get enough juice) and bottle lime juice. I prefer the Key Limes as it made the pie more tart, less sweet. My kids and husband like it with the bottled juice. Either way, we all agreed that it was delicious! This was a super easy recipe with fabulous results. It tasted even better the next day, but good luck finding a piece left in the fridge.

Curried Cauliflower

This recipe was quick and easy. I love that it required so few ingredients that I already had on hand. I made a few adjustments. I added carrots and bell peppers. I used lo fat mayo, skim milk, cream of mushroom soup, cumin, onion powder, garlic salt, and a bit of brown sugar. It sounds like a lot of changes, but this was a great base, and the changes were for my tastes. It seemed like it was missing a little zing. Glad I found it. Will be serving it tonight over Jasmine rice.

Easy Cajun Jambalaya

very tasty. I added a few things like shrimp sauteed in butter, white wine, creole seasoning and 2 tsp of sugar. I added the shrimp and the sauce to the finished jambalaya and it made it very tasty. Also added creole seasoning while cooking and a can of diced tomatoes pureed in the food processor. This was so quick and easy and tastes like a lot of effort went into it. The creole seasoning gave it a great zip. My kids loved it.

Butternut Squash Soup

I had butternut squash soup n an upscale restaurant this fall and I have been craving it ever since. This recipe came really close. I used it as a base and following the lead of other reviewers, tweaked it a bit. I roasted the squash with olive oil and dusted it with cinnamon. I scooped out the tender flesh after it roasted about an hour. It smelled great baking. While it was baking, I sautéed onion, garlic, and fresh ginger in margerne. I added chicken broth and then added the squash. As far as seasoning, I added 1/2 tsp of curry, 1/4 tsp of cayenne pepper and black pepper. I then used a submersion stick blender and blended the mixture in the pot. I then added 1/2 a block of cream cheese and blended it as well. It was super creamy and smooth, but was missing a little something. So I added a about 1/4 cup of cheap beer and about 2 tbsp of brown sugar. This brought it over the top! This was great!

Oxtails with Gravy

Excellent and very easy! I love this recipe. I saved three years ago and finally got around to preparing it. My family loved it. The gravy recipe is terrific and I think it would be great on lamb chops too.

Double Layer Pumpkin Cheesecake

My family loved this. It is so easy and so delicious. This one is a keeper. I followed the advice of other reviewers and used more cream cheese and added 1 cup sugar, and 1/3 cup sour cream. The texture was great and even with a deep dish pie crust, there was enough filling left for a second pie. I did add enough of the cream cheese mixture for at least an inch for the first layer. I think that makes it more interesting. I also used pre-made pumpkin pie filling, the whole can. It was great. Will definately be making this again.

Chef John's Pumpkin Pancakes

This was a great recipe! I did make a few changes though. I substituted one cup egg nog and added an additional one and a quarter cup of milk. These pancakes cooked very nicely on the griddle. Very light and fluffy and soooooo tasty. The eggnog gives it a very rich holiday flavor and the pumpkin is highlighted well with the eggnog flavor. I served these with butter, maple syrup and whipped cream. Simply delicious.
