Funnel Cakes

Reviewed: Nov. 14, 2011
YUMMY!!!Thank you for posting this:-) I scaled it down to 4 and put the batter in a plastic condiment bottle from the dollar store and cut the tip all the way, it worked pretty well! I only had canola oil on hand(it was still so good!!!) I did use an electric mixer to beat the mix and I used a regular stainless frying pan, poured about an an inch of oil in it, waited a few minutes and started to pour, let it cook 1-3 minutes and turned over and did same...just wonderful!!!! i am gonna surprise my hubby with his fav treat when he gets home tonight.

German Potato Pancakes

Reviewed: Jun. 28, 2011
WOW!!! thank you for a great recipe! I have never made this before and they taste just like my 1st gen. German/American mom use to make:-) I did make sure all water was squeeze out, and chopped onions very fine. I used canola oil in non stick frying pan, just enough to coat the bottom, well ah prob. a little more and got the pan really hot and dropped small balls in the hot pan and gently patted it down w a fork. I like them pretty thin, so all on how you like them! Enjoy:-)

Crustless Spinach Quiche

Reviewed: Oct. 29, 2012
Great recipe! I used 5 large eggs and I sauteed red onions, jar of mushrooms, 11 oz of spinach. i also added garlic powder and bacon bits. I used 3 cups of a bag of shredded sharp cheese. This is one of those neat recipes that you can really make your own by adding different cheeses and herbs and spices. Also if you are doing the atkins diet, this recipe should be a staple in your rotation;-)

Baked Kale Chips

Reviewed: Mar. 21, 2012
Thank you so much for sharing this! I have NEVER even tried kale before this and I love these chips..I was craving salt today and instead of reaching for my hubby's high fat chips, I made these! I broke off lots of pieces from the main branch of the kale and lined my pan with foil, sprayed the the foil with Pam and spread out the kale chips all over, I then sprayed them with olive oil Pam No fat or calories(well if any, very little) and sprinkled some kosher salt(very little and some garlic powder and baked for 7-9 minutes in a 350 electric oven...so YUMMY!!! my new snack;-)

Greek Style Garlic Chicken Breast

Reviewed: Mar. 6, 2012
very good marinade! I only kept the chicken in the marinade for 20 minutes(had to eat and run!) and it was still so tasty! I didnt measure but I am sure I put in more lemon and garlic, as i love them, no paprika though and for side dishes, I made fresh spinach sauteed with EVOO and garlic and fresh mushrooms with pasta sauteed with EVOO, garlic and Parmesan cheese with basil and oregano, s&p, what a meal! "oh so good";-) Thanks for the chicken recipe!

Chicken Breasts with Herb Basting Sauce

Reviewed: Aug. 2, 2012
Fantastic recipe! Very juicy. Next time, I will bake at 450 for less than 45 minutes, probably would be done at 35 minutes with the bone in breasts. I drizzled with olive oil and then sprinkled salt, pepper, Italian seasoning and garlic powder. This was pretty tasty and can made with many different varieties of herbs!
