Delicious Pineapple Muffins
Well, I was hesitant to make these because of the mixed reviews, but they looked and sounded so good. I probably should have listened to my gut! I made the recommended changes - added the pineapple to the batter, didn't melt the butter for the topping. I didn't have any problem with sticking to the pan (greased pan with crisco). However this just doesn't taste like a muffin! It has a weird dense texture and hardly tastes like pineapple (as others have said). The crumbly topping, I have to say, is great! And the end product looks delicious, but it just doesn't live up in taste. I won't be making this again.

Caramel Bars
These bars are really great tasting. I modified the recipe a bit - doubling the oat mixture as other reviewers suggested. However, I also reduced the amount of butter by 25% and found that it came out just as good (and still very buttery). I made the mistake of using wax paper to line my baking dish because I was paranoid that it would stick - well it did - but to the wax paper! The bottom was fine and came away from the paper easily, but the sides stuck to the wax paper and so I had to cut away quite a bit of the edges of the bars. This was a bummer - but now I know better. Very tasty and very rich!

Fresh Southern Peach Cobbler
This was a fantastic peach cobbler. My husband challenged me that I couldn't make a peach cobbler like his grandma used to make. I had to prove him wrong and I used this recipe to do it. He loved it! I used the trick that others suggested and boiled the peaches in order to remove the skin with ease. Worked like a charm!
