Green Curry Thai for Kings

Reviewed: Jan. 5, 2007
Great recipe! Although I did make a couple of adjustments: I added a bit extra green curry paste (only 'cause I like it real spicy) and anyways, I think it has alot to do with what kind/brand of paste you buy, some are just spicier than others. I also added julienned red and green bell peppers(1/2 a pepper each), omitted the corn, added a little extra ginger, added fresh squeezed lime juice of 1/4 of one lime, and 1 1/2 tablespoon of white sugar, and I used a small handful of fresh cilantro leaves instead of the basil. It was remarkably close to the taste of the green thai curry dish at my fave thai restaurant! DELICIOUS!!!

Apple Crisp II

Reviewed: Nov. 7, 2006
This was great! I omitted the water, as others had suggested, cut down on a bit of the sugar, and I also made a caramel sauce with butterscotch caramel chips, corn syrup and a bit of water- over med. heat on stove, and drizzled that on top with - oh so yummy!! Will for sure make again.

Salmon and Swiss Chard Quiche

Reviewed: Nov. 7, 2006
This was wonderful! So easy to make too. I made a couple of little modifications: I used sourdough croutons (I crushed them up into crumbs) instead of regular bread crumbs, I sauteed some fresh chopped garlic (1 clove) with the onion and chard, added a dash more nutmeg, and added about 1/3 cup of crumbled feta cheese on top of quiche 5 mins. before removing from oven- absolutely delicious! Will definetly make again.

Quinoa Chard Pilaf

Reviewed: Nov. 4, 2006
Very yummy! I did make a few little modifications, though. 1st of all, I didn't have quinoa, so I used brown rice. I also used dry red lentils instead of canned. I threw in 3 bay leaves with the garlic and onion and left them in the pot to simmer with everything. I chopped up a tomato and added that. It was great (and healthy)! Will definetly make again.

Apple Curry Turkey Pita

Reviewed: Aug. 18, 2006
Very tasty! My hubby and I loved these flavourful pita wraps... I served them with some spiced up sweet potato wedges which I found went really well with this recipe. I used Red Delicious apples for this recipe, I find their flavor mingles best with curry- mmmm so good!
