Bev's Mac and Cheese

This recipe is definitely quick and easy. I made the cheese sauce in a saucepan over the stove and it took a lot less time than the recipe called for with the microwave (less than 5 minutes). I agree with another reviewer that there is way too much cheese sauce for 1 cup of elbow pasta. I might add an extra 1/2 a cup or 3/4 cup pasta next time.

Chicken Fried Chicken

WOW, this recipe is AMAZING. I customised it a little based on other reviews and also what I had in my pantry. I didn't have potato flakes, so I did without it. I didn't have saltines, but I had cracked pepper flavoured water crackers, so I used those instead. I had a whole chicken (about 3.3 pounds) that I cut up into pieces, rubbed with 1 teaspoon salt, 1/2 teaspoon white pepper and 1/2 teaspoon ground black pepper and left to season for a few hours. I took another reviewer's comment and breaded the chicken in this order = flour, egg, coating. Shallow fried the chicken pieces in a saucepan on 2-3 minutes each side to get a golden brown crust and then arranged them in a baking pan and left them baking in the oven at 185 degrees celsius for about 15 minutes. I'm not a big fan of deep frying hence I went the shallow fry + bake option. The results were AMAZING!

Too Much Chocolate Cake

I've used this recipe many times, all fail proof. Last night, I realised that I only had 2 eggs and didn't have any sour cream. I used 3/4 cup milk with 3/4 tablespoon of vinegar and 1/3 cup of butter (approx. 75 grams) to replace the sour cream (or you could use 3/4 butter milk and 1/3 cup of butter). I also only made do with two eggs, and the cake turned out superbly! It's not has dense as the original recipe, but the taste wasn't compromised!

Traditional Mashed Potatoes

Great recipe! Very easy to make and still heats up really well the next day. I would add more butter next time and instead of white pepper, use black pepper instead.

Banana Muffins II

Very moist and very yummy! I'm a really big fan of crusty muffin tops so I used this recipe to make 10 muffins with big crusty tops, instead of 12 as suggested by the recipe (I might make 9 next time for bigger crusty tops). I didn't have any chocolate chips, as suggested by others, so I chopped up 100 grams of Cadbury dark cooking chocolate instead. Very yummy, and surprising quite light as well. Will definitely make it again.

Simple BBQ Ribs

Wow, amazing! This was only enough for two people! (As main with a side of mash potatoes)I boiled the ribs for 45 minutes and put them in the oven for an hour, this seems just the right amount of time for smaller ribs, for larger ribs though, I think I should've left it to boil for an extra 15 minutes. Still delicious nonetheless. I didn't have any garlic powder, so I used a tablespoon of garlic salt instead, and reduced the amount of salt by a tablespoon as well. Can't wait to make it again!

Roast Sticky Chicken-Rotisserie Style

Absolutely love it! Easy to prepare, the house smells great from the herbs. Leftover chicken makes a great sandwich, just add some mayonaise and fix it up with cos lettuce and cherry tomatomes and you'll get a grand roast chicken sandwich for lunch!

American Lasagna

Three phrases--Love it, love it, love it! Recipe is fantastic the way it is, fool proof everytime. Just replace beef with carrots, zucchini and mushrooms if vegetarian, otherwise works well will any sort of meat--chicken or lamb mince.
