Chicken Fried Chicken
WOW, this recipe is AMAZING. I customised it a little based on other reviews and also what I had in my pantry.
I didn't have potato flakes, so I did without it.
I didn't have saltines, but I had cracked pepper flavoured water crackers, so I used those instead.
I had a whole chicken (about 3.3 pounds) that I cut up into pieces, rubbed with 1 teaspoon salt, 1/2 teaspoon white pepper and 1/2 teaspoon ground black pepper and left to season for a few hours.
I took another reviewer's comment and breaded the chicken in this order = flour, egg, coating. Shallow fried the chicken pieces in a saucepan on 2-3 minutes each side to get a golden brown crust and then arranged them in a baking pan and left them baking in the oven at 185 degrees celsius for about 15 minutes.
I'm not a big fan of deep frying hence I went the shallow fry + bake option. The results were AMAZING!
