Amazing Whole Wheat Pizza Crust

Reviewed: Dec. 6, 2010
If you're looking for a crispy whole wheat crust, look no further. Following the recommendations of others, I used only whole wheat flour (3 cups) and used white flour only for dusting the counter. I made 4 smaller pizzas with thin crusts. Dusting the pizza stone or tray with semolina flour/cornmeal works really well to keep it from sticking and gives it that pizza-restaurant taste. I baked the crusts on their own first at 550F for about 4 minutes, and then baked again at same temp with toppings for about 5 minutes. Yum!

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

Reviewed: Dec. 6, 2010
What a delicious recipe! I made a few changes of my own (added feta, mushrooms) and a few changes recommended by others (doubled shallots, chickpeas and green onions). This really is a terrifically light and refreshing way to use up your swiss chard. This recipe is definitely a keeper.

Buttermilk Scones

Reviewed: Nov. 3, 2010
This is a great basic scone recipe, allowing you to modify as desired. They are not sweet, as others have mentioned, but could certainly be made sweet with some sugar or honey. I substituted half the flour with wheat flour and added some wheat germ for nutrition. I also added almonds and craisins. They turned out beautifully soft and airy. Next time I will probably add some sugar for sweetness, but am happy with how they turned out.

Baked Kale Chips

Reviewed: Oct. 31, 2010
This recipe seemed a bit odd at first considering kale is usually served raw or sauteed, but it was strangely good. It's nice having a salty treat that is actually healthy! Instead of salt, I used Lawry's seasoning salt to give it extra flavor. It is really easy to over salt this, so be careful. I will definitely be making this again.

Scottish Oat Scones

Reviewed: Oct. 19, 2010
These scones are hearty, wholesome and full of oatey goodness. I added craisins instead of currants and substituted some of the sugar with maple syrup. I think the maple syrup gave them a richer flavor, which I loved. I will definitely be making these again, especially considering they don't require buttermilk or loads of butter like other scone recipes.

Oatmeal Chocolate Chip Cookies I

Reviewed: Jun. 21, 2009
These are great cookies. I followed the recipe, except for adding some coconut in place of chocolate chips and adding a teaspoon or so of vanilla. They came out quite thin and dark, but the texture was really good. They almost reminded me of lattice cookies. I found 15 min to be a little too long, although they weren't burnt. I will definitely be making these again.

Chocolate Chocolate Chip Cookies I

Reviewed: Feb. 7, 2009
I made a half batch and still got over 2 dozen cookies. I also lowered the amount of sugar and chocolate chips and found them still sufficiently sweet. This recipe is a keeper!

Pumpkin Black Bean Soup

Reviewed: Jan. 18, 2009
This is a delicious and flavorful soup. I am a vegetarian so I substituted veggie broth and soy bratwurst. I also used apple cider vinegar instead of the sherry. I have also added corn from time to time and enjoyed the added texture. This is one of my favorite soups. I highly recommend it!

Spinach Brownies

Reviewed: Jan. 18, 2009
I had to change this recipe quite a bit due to the ingredients I had on hand. It reminded me a lot of a crustless quiche and had a nice texture. We had it for dinner and then breakfast the next day! I enjoyed this recipe and think it is really versatile. Like other reviewers, I greatly reduced the butter and still thought it was plenty rich.

Chocolate Chocolate Chip Nut Muffins

Reviewed: Jan. 18, 2009
These were quite good. They weren't AMAZING, but they were good. I had to use part brown sugar/part white sugar due to what I had at home. I also had to use whole wheat flour, which is probably what is leading me to give 4 stars and not 5. Even with those substitutions, these were a nice treat. If I made them again, I think I would substitute some of the milk with cold coffee. That can give a chocolate dessert a wonderful, richer flavor.

Mom's Brown Gravy

Reviewed: Jan. 17, 2009
This past Thanksgiving I needed a great recipe for a vegetarian gravy. I am a vegetarian and wanted to make a delicious version of the traditional meal. I have to admit that when I saw Marmite in this recipe I had my doubts. It turned out fantastic though. It has a very hearty, meaty (mushroom-like) flavor. It was terrific. I now make this with many of my recipes.

These are amazing. The recipe is also very versatile - add walnuts, peanuts, coconut, bananas, etc. It is all terrific. And best yet, only one stick of butter!

Apple Strudel Muffins

Reviewed: Oct. 11, 2008
This is a terrific recipe. I made some of the changes suggested by others - used 2 cups of apples, 1/2 white sugar, 1/2 brown sugar, added cinnamon and nutmeg. I also added walnuts for some crunch. The spices add the most wonderful flavoring. I will definitely make these again.

Chickpeas in Tomato Sauce With Feta and Wine

Reviewed: Oct. 27, 2007
This is excellent. I used white beans instead of chickpeas because I had none, and I actually found the consistency of the white beans more suitable. I paired it with a recipe called 'Barley Bake' on allrecipes. It was a fabulous dinner!

These are amazing. I did add oil instead of butter like others suggested. I also added 1 tsp of vanilla because vanilla makes all desserts fantastic!

White Bean and Lamb Soup

Reviewed: Sep. 11, 2006
This is incredibly yummy on a chilly day. There is no need to wilt the spinach separately. The soup is hot enough to just put the spinach right in. It will wilt on its own. This was fantastic. The feta and spinach make this soup.

Red Bean Salad with Feta and Peppers

Reviewed: Aug. 10, 2006
This was very flavorful. I used tomato-basil feta instead of the regular feta which gave it the missing flavor other reviewers mentioned. I look forward to sharing this with others.
