Roasted Swiss Chard with Feta

My only change was to add garlic to onion and stems! It was a hit with all 3 boys in my house. Cook time was pretty accurate - I just upped it to 375 to speed things up a little on my pampered chef pan.

Chicken Tortilla Soup IV

Rave reviews at my house! I made a couple of changes...used store bought blue corn chips (added two handfulls in with the veggies), sauted a chopped red onion and red pepper before adding spices (1 tsp oregano and 1.5 tsp cumin and chili powder **note more than doubled). Doubled the broth and boiled 2 frozen chicken breasts in it before shredding and adding back in. Used only 1/4 cup clilantro - freeze dried. Crumbled more chips on top. Would be awesome with cheese and I forgot to add lime juice as other reviewers suggested.

Red Lentil Curry

Used a can of diced tomatoes (28 oz can), heaping tbsps of curry paste, 1 tsp of garm masala instead of the curry pwder and doubled the ginger and garlic. *** note to self *** only add 1/2 tsp of chili pwder if using Indian Chili pwd.

Thai Noodle Salad

AWESOME!!!!! I used rice stick noodles and didn't have any sesame seeds or peanuts (which would have made it even better). Added about 2 lbs of shrimp to make it more of a meal. Hubby LOVED it and gobbled up all the leftovers too :)

Low-Fat Blueberry Bran Muffins

This was probably the most moist bran muffin recipe I've tried. Not too sweet and perfect for breakfast. I made a batch with raspberries and one with blueberries. Raspberries were my fav. Note: used 1/2 cup no-fat greek yogourt instead of apple sauce (that was all I had) and used 1.5 tsp of baking powder instead of the powder and the soda.

Italian Veggie Rolls

Awesome. Used large shells because they're easier to stuff. Was generous with my broccoli and mushrooms (mini portobellas) and added a cup of chopped baby spinach. Seasoned the veg with 5 cloves of garlic, basil, oregano, cayenne pepper and also used 2 eggs instead of 1.

Chicken in Creamy Sun-Dried Tomato Sauce

Really yummy and nice for guests! Used Chicken soup, cooking sherry, and marinated artichokes. I will not use the sherry next time if using the marinated artichokes because I found it had too much of a "vinegary" taste that covered up the sundried tomatoes. Put fresh parmasan cheese on the top, served with mashed potatoes. Got rave reviews!

Roasted Asparagus and Yellow Pepper Salad

I had to cut the oil in 1/2 for both parts of the recipe and it was still plenty oily. I also didn't quite use all the dressing. Other than that it was AMAZING!!!! I used a red and yellow pepper and thinner asaparagus. Because of that the pepper needed a about 4 mins longer in the oven. I also roasted the onion with the other veggies.

Heavenly 'Apple of My Thigh' Dessert

We've been making this dip for years and it NEVER fails to have the plate clean before you're ready to go home. There is NO need for the added sugar though...kinda overkill. Thanks to the other reviews - I had no idea you could dip apples in sprite to keep them from turning brown!

Double Chocolate Biscotti

These are awesome. I followed another reviewers advice and only used 1 tsp of baking powder. This worked out perfectly and were't crumbly at all. I used 3/4 cup white chocolate chips instead of the squares. Very yummy!

Clone of a Cinnabon

Made these 5 or 6 times already and they are AWESOME!!!!! Thanks for this super easy and show-stopping recipie. I used the breadmaker and make an extra batch of icing as someone else suggested. I freeze the icing and use it for the next batch of buns. The texture is different, but just needs a drop or two of milk and to be wipped up, then it's as good as new. The buns have yet made it to the freezer - they're gone too fast! I have made the buns all up the night before and then cooked them the next day. They take a little longer to rise, but have worked out just as good. HINT: Don't over cook them or they won't taste like Cinnabon buns...but still are very good anyway! LOVE THIS RECIPIE!!

Pumpkin Parfait

Autumn Spice Ham Steak

Very good. Not too sweet, but definitely livens up plain ham steak! I used smoked, fully cooked ham and added it after the apples were soft (used 3 for a little extra) and used pumpkin pie spice. Served with mashed sweet potato.

Gingerbread Biscotti

Yummy...but not quite spicy enough. I'll add pepper next time like other reviewers suggested. Once I dipped in white chocolate it was VERY yummy of course. It would look prettier with a drizzle of white and milk chocolate. NOTE: the oven may need to be turned down to 350. It burned on the bottom before it was done then when I baked the second time it was already too brown to leave in for very long. It didn't turn out as crispy as I would have liked.
