Classic Rice Pilaf

This turned out great; I loved the texture! Followed the recipe (omitted the optional saffron) and added a bit of dried parsley flakes and yellow food coloring to the simmering broth for visual appeal.

Chewy Chocolate Chip Oatmeal Cookies

The only thing I changed in this recipe is the amount of salt I added. I had a feeling 1 tsp would be too much so I just added a couple of quick shakes. Other than that, I followed the recipe with no adjustments and the result was really great. These are soft and chewy and have a great flavour. I used an ice cream scoop to place my cookies on the baking sheet and ended up with 32 cookies.

Italian Spaghetti Sauce with Meatballs

I did not think this was a good recipe. Mostly just tasted like canned tomatoes, very sharp and acidic, and it was way too garlicky and salty. There didn't seem to be any "depth" to the sauce even after the long simmering time. Also found it to be thin and soupy. The meatballs were okay but I knew they would need salt so I did add some, otherwise they would be pretty tasteless. I did however like the idea of cooking them in the sauce. Oh well - can't win 'em all.

Pork Chops Italiano

Followed the recipe as written. These were good, but not great. I would highly suggest seasoning the pork chops with salt and pepper as you're browning them, because although the sauce is flavorful enough, the chops themselves were on the bland side. Also, my chops turned out dry and I don't know if this was due to the long simmering time or what. On the plus side, this recipe is easy and presents nicely.

Chicken Enchiladas I

For the sauce I used chopped green chilies instead of green pepper, added some cayenne pepper, used tex mex shredded cheese,and omitted the water. I let it simmer for a few minutes and did not find it too "soupy", rather, it was creamy as the recipe states. That being said, we filled the tortillas using a slotted spoon and drizzled the excess sauce on top, along with the taco sauce and shredded cheese. And let me tell you these were near perfect in taste, presentation,texture, and consistency! We live in the Canadian prairies but my husband has family in SW Texas, and said these rival the enchilads you find around there. Thank you!

Best Chocolate Chip Cookies

I followed the recipe but watched carefully when adding the flour. For me, I added about 2 1/2 cups to get the right consistancy; otherwise it would have been a bit dry and crumbly. These cookies taste delicious and they are crispy on the outside and chewy in the middle as the recipe states. Mine turned out pretty flat but we didn't mind. For some reason these were hard to get off the cookie sheet, so I sprayed the cookie sheets for the rest for the batches and it helped.

Quick Tuna Casserole

Scalloped Potatoes and Onions

When I was putting this together the smell reminded me of deviled eggs. Not necessarily a bad thing, just odd for scalloped potatoes. Anyway, I wasn't blown away but this was pretty good. The sauce turned out nice and thick. Definitely check your potatoes at the one hour mark. Mine were done in just over an hour.

Quick Szechwan Sauce

I'm used to soy sauce-based sauces for stir frys but this was a nice change. I used peanut oil instead of olive oil and red pepper flakes instead of the chile peppers. I'll use less sugar next time I make this.

Peppermint Chocolate Fudge

I'm usually pretty good around the kitchen but when it comes to fudge, it either turns out too soft, too hard, too sweet, etc. Until now! I was so pleased with this recipe. The consistancy was exactly what I wanted, the flavour was great, and they look pretty. I used mint chocolate chips instead of semi-sweet b/c that's what I had in the cupboard. Other than that I followed the recipe as written. It's very easy. The only advice I have is you have to act pretty quickly when pouring it out of the pot because it'll harden fast, so have your pan ready beforehand.

Delicious Ham and Potato Soup

I couldn't decide what to make for supper last night so I browsed some recipes and am I ever glad I stumbled upon this one! This is an excellent base recipe that really allows you to use your creativity. It resulted in probably the best soup I've ever had. Here's what I did, without straying too far from the recipe: - Used thick cut pepperjack bacon instead of the ham. - Substituted half of the water with low sodium chicken broth. - Added a can of corn and a pinch of parsley. - Did not need to add any salt because of the bacon and chicken broth. Other than that, I followed the recipe as written. It was pretty easy too. I can't wait to serve this to company. You must try it!

Braised Balsamic Chicken

One of my new favorite chicken recipes. I only used 2 chicken breasts but all the sauce, which was great over whole-grain spaghetti. SO tasty! Hard to believe it's on the healthier side. Will make this again, often. Thanks!

Banana Oat Muffins

Excellent. The only reason I didn't rate these 5 stars is I made minor adjustments: I used less oil and added 2 tablespoons of applesauce. And I used 3 bananas, which is probably more than a cup. Other than that, followed the recipe. The results were beautiful, nutritious, and DELICIOUS muffins.

Golden Pork Chops

Super easy to prepare, wonderful to eat! Pork chops came out fall-off-the-bone tender. Added a little garlic powder in addition to the seasoning salt and pepper. Served with veggies and mashed potatoes and spooned some of the sauce on the potatoes. Total comfort food.

Easy Tuna Casserole

To get that five-star finish, I added a can of mushroom soup, a can of drained green beans, and seasoned with black pepper. After it was done, I let it stand uncovered for about 10 minutes, to better allow the flavors to blend. Tasty, and makes great leftovers!

Taco Pasta Salad

This was really tasty made as written. It makes a lot and is even better the next day. I don't know about it being a main dish though, to me it was more of a side dish. I plan to bring this to the next potluck/get-together I attend. Might use less onion and throw in some jalapeno peppers.
