Southern Grits Casserole

Just made this and it was really good, a keeper. I added onions & garlic to the sausage and a handful of Pecorino Ramano cheese along with sharp cheddar to the grits.I tasted the grits several times to make sure they were seasoned properly before adding the eggs. I only made a 1/2 recipe using 4 eggs because My husband doesn't like grits at all and didn't want me to make this. Good thing I don't listen to him, he loved it and said make sure to keep that recipe!

Soft Sugar Cookies IV

Just finished baking these. I really like the dough, easy to work with and they shape and bake beautifully. My only issue is that IMO they have a slight raw flour taste. I baked one sheet, tasted one and decided they needed something else to combat the raw flour taste; I added cardamom. That did the trick for me! I'm betting these cookies will be better eaten the next day; we will see.

Pumpkin, Sweet Potato, and Leek Soup

I read the reviews on this soup and made it for Thanksgiving...not a hit, not a keeper. Wasn't impressed with the flavors. For me it was just OK nothing more.

Sicilian Homemade Ricotta Cheese

I'd say this will yeild about 2 lbs of cheese. You can freeze your whey in cup containers, use it in pancakes/waffles, muffins and bread. Anywhere a recipe calls for water. Be creative, it's worth it.

Rosemary Shortbread Cookies

I really, really like these cookies! I rolled them into a log shape and placed them in plastic wrap before refrigerating them. Once chilled I sliced them, sprinkled sugar on them and baked them. They are Fabulous!!! This is a keeper!
