Haitian French Toast

I didn't let the bread stand overnight but lightly toasted them in the toaster and they were fine. I used challah bread but ommitted the confectioner's sugar, but otherwise followed the recipe exactly. There was a nice hint of OJ and the were delicious and moist without any maple syrup! If I happen to have whipping cream I'll definitely make this again.

Zucchini Brownies

Delicious even w/o frosting. I wanted chocolately goodness and while I expect brownies to be thick and chewy, these were fluffy and light, though a little heavier than a cake which was fine by me. The batter was dry until the zucchini was added which in my case made it fluid and wet. Easy to make too!

Magic Peanut Butter Middles

I didn't have brown sugar, so I substituted white. I compensated for the extra sweetness by reducing the sugar in the peanut butter filling (only 1/3c.). I added about 1/3 of a bag of chocolate chips to the chocolate because who doesn't like more chocolate? I made this on the stand mixer and had to add some milk so it didn't complain though the dough should come out on the dry side! I found these easy to make if you have someone help you make balls out of the chocolate mixture then flatten them into disks while you make peanut butter balls and cover them with the chocolate disks. YUMMY!

Cream Cheese Fruit Dip

I found this incredibly yummy! I only had white sugar and it was slightly too sweet (even for my sweet tooth), so I'd recommend reducing that ingredient slightly especially if you're not a fan of sweets

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

Chewy yet crunchy = Yummylicious I used chunky peanut butter & baked for 12 minutes and they came out super good. They almost look like they come out of a cookie book when you refrigerate them for a couple of minutes then form medium-big balls and flatten them slightly on the pan! - I'll post piks soon :)

Banana Sour Cream Bread

Delicious. Made one loaf exactly as indicated with the exception of the cinnamon/sugar 'dusting'. Instead, I made a crumb topping using brown sugar, flour, butter, and cinnamon. It turned out moist with the perfect balance of sweet and banana flavor.

Herbed Chicken Nuggets

Delicious! I've made this several times already. I didn't have thyme or fresh parsley, but I used some dried rosemary and shredded parmesan cheese. Other than that my only recommendation would be to drip a little bit of olive oil on the nuggets when they are on the baking dish instead of adding it to the bag. This adds flavor and keeps the chicken tender while keeping the seasoning mixture intact. Who knew wheat germ could taste so good?

Playgroup Granola Bars

I used blueberry applesauce instead of veggie oil, and added bits of chocolate and hazelnut instead of the raisins. They came out chewy and good, but not particularly amazing. They need to be cooked a lot longer with this substitution. I will keep playing around with the ingredients, as this is a great alternative to the store-bought ones.

Banana Crepes

Mmmmm...delicious! We didn't have any half and half or heavy cream so I used milk and cream cheese until it had a creamy consistency . I sliced up the bananas and used the topping as a filling instead and sprinkled the top with confectioners sugar and cinnamon. Not too sweet, just right!
