Simple Salisbury Steak

Very good and very simple! I used crushed saltine crackers instead of break crumbs since I had them on hand. Should have left the salt out when I used the crackers, but it still ended up tasting delicious!

Baby Back Ribs

Kitty Litter Cake

Great for Halloween. Loved the concept of making it look like kitty litter, but I did not like the way the cake tasted nor did I like the texture. The second time I made this, I made my own trifle, but followed this recipe for putting the crushed cookies on top to make it look like kitty litter.

Kettle Corn

The only problem with this recipe is that it is highly addicting! I have to admit, the first time I tried making it, I burned it. The second time, I followed the advice of another reviewer and used my stir crazy. I added the sugar after the oil started boiling. I added salt to taste after it was popped. Absolutely wonderful!

Hot Artichoke and Spinach Dip II

I used 3 garlic cloves instead of 1 and instead of 1/4c romano and 1/4c paremson, I used 1/2c of a shredded parmesan blend: parmesan, fontina, asiago and romano. This was the best spinach dip I've ever had.

Broiled Tilapia Parmesan

Tasty! The only change I would make is to wrap the pan with aluminum foil so that the cheese won't melt to the bottom of the broiler pan. Next time I will serve this with fettucini alfredo.

Garlic Chicken

Delicious and very easy to make. I followed the advice of other reviewers and added just a little more garlic. I heated up the garlic and oil in the microwave and poured it into a ziplock bag which I used to marinate the chicken in. The only reason why I chose to marinate it overnight was so I wouldn't have to do any preparation the following day. I used 6 chicken thighs (its what I had on hand) and it was so... good. There was just enough bread crumbs/parmesan to cover all 6. Will definitely make this recipe again.

Cottage Cheese Chicken Enchiladas

I used 4 chicken thighs in place of the chicken breast (its what I had) and it was delicious! The only thing I will try next time is to reserve some of the stock from boiling the chicken and use that in the meat mixture once I've added the seasoning instead of plain water. My husband doesn't like cottage cheese, but said he wouldn't have known the enchiladas had it if I hadn't told him. This recipe is definitely a keeper.
