Spinach-Stuffed Salmon Fillets

This is an absolutely wonderful and easy recipe. Only thing I did different was to wilt the spinach before adding the remaining ingredients. For my own taste I felt I needed a sauce to compliment this dish. I used a very light cream cheese sauce with chopped chives sprinkled over top. This is a divine recipe, probably my favorite of all salmon recipes and it is so easy to prepare.

Delicious and Easy Mock Risotto

Loved this recipe. I omit the onions however, my Italian grandmother's rule was to never mix onions and garlic - use one or the other, but never mix them, so I didn't. The dish is marvelous!

Cauliflower and Broccoli Bake

Like this recipe a lot. Only thing I do differently is to microwave the cauliflower and broccoli until not quite done, then proceed with the remaining instructions. I found the cauliflower and broccoli to be a bit mushy when boiled. Great way to get 'good for you' veggies.

Best Ziti Ever

Love this recipe! I included it in my 'buffet table foods' for our Family Holiday Gathering last year. Will definitely use it again. For years Lasagna was in its place, but this beats that in ease of making and the taste was just as good. No one complained that the Lasagna was missing as they had in the past when it was replace with another pasta dish.

Maple-Balsamic Vinaigrette

This has become my salad dressing of choice, though I must say it is perfect for my spinach salad, which we eat more than once a week. When using it on the spinach salad I had a couple pinches (or more) of bacon pieces (bottled kind) and then heat he dressing in the microwave for a few seconds. The only change I make to the original dressing is to add a tad less maple syrup. As a few other readers have said 'using a good balsamic' makes quite a difference. This is without a doubt the best all around salad dressing recipe I have.

Asparagus with Sliced Almonds and Parmesan Cheese

Aside from what other reviewers commented I found using the parmesan cheese as the recipe instructs to be a fantastic and elegent way to serve asparagus. I believe the problem with those who found addding the cheese while cooking didn't work was because they used the dried type of parmesan. I used freshly grated parmesan and the recipe turned out superb, made an elegent presentation and tasted wonderful. This recipe will definitely go into my recipe box. I will also serve it to dinner guests. I give it five stars plus!!

Orzo with Parmesan and Basil

This recipe is wonderful and elegant. Comes across as being much more difficult to make. And the taste is superb. By far the best orzo recipe I've ever had. It is definitely delicious and presents well - I serve it to dinner guests and they rave about it.
