Magic Mango Bread

Really good recipe! I made only one loaf and used 1/2 cup brown sugar instead of 3/4 cup white sugar. Two eggs as well, plus some ginger because I like it. My husband can't eat nuts and my daughter won't eat raisins, so I threw in some Craisins to good effect. My mango pieces stayed mixed throughout, perhaps because they were small. I will make this again, for sure.

Penne with Spicy Vodka Tomato Cream Sauce

This was great with just a little tweaking - we like things spicy, so I used the hot Italian turkey sausage (1 package/5 links) as well as the crushed red pepper flakes. I also added half of a red onion, diced, with the garlic and increased the vodka to 1/4 cup. Dried parsley worked fine, but I would consider adding some fresh basil next time. I also used one box of bowtie pasta (1 lb.)I omitted the salt and we never missed it. I had enough to feed at least six hungry people!

African Peanut Soup

Really seriously good! Added some cubed butternut squash 15 minutes into the simmer along with some cinnamon and a heaping tablespoon of chili powder. I also minced a large jalepeno pepper and sauteed it with the onions and bell pepper. Sour cream and cilantro finish it off nicely. Can't wait for the leftovers!

Herb Batter Bread

Once upon a time I had a recipe for "casserole bread" that was a favorite. No idea where that recipe is now, but this one is as good as or better! Followed the recipe exactly except for substituting olive oil for the shortening. Could not WAIT to cut the bread! My old recipe had the option of adding shredded cheese, so next time I plan to try it. Make sure you start early to allow for rising time.

Grilled Portabellas with Caramelized Onions and Avocados

I used my panini maker to grill the portobellos - easy and quick! I also added some crumbled gorgonzola cheese and sliced tomatoes to the sandwich. Tasty!

Addictive Sweet Potato Burritos

These were really good and you can make little changes to suit your taste. I'm not a kidney bean fan, so I used pinto beans. Black beans or small red Colorado beans would also be good. Next time I'll add a minced jalepeno to the onion since I like things spicy! I had a little trouble rolling these up because I had so much filling, so you might get an extra tortilla or two to take care of the excess. I served these with some mexican rice and a salad and my family was VERY happy!

Creamy Rice Pudding

I'm not a big rice pudding fan, but this is a good one! I used brown jasmine rice and cooked it about 5 minutes longer - just until the water was absorbed. I also added the salt and butter at the beginning instead of later. No need for a second pan, just add the milk (skim) and sugar to the cooked rice. I also used Craisins instead of raisins. Finally I sprinkled the top with cinnamon sugar. The brown rice makes for a slightly chewier texture, but a MUCH healthier rice pudding.

Oatmeal and Wheat Flour Blueberry Pancakes

Very nice pancakes and healthier than most. I added some cinnamon to the flour mixture for added taste. My recommendation is to add the blueberries by hand after you have formed the pancakes on the griddle - that way the blueberries are evenly distributed. I also used a lot more than 1/2 cup of blueberries, but my berries were pretty big.

This is seriously the best bread you will ever eat! I use my Kitchen Aid mixer so I don't have to knead the dough and add the garlic before the first rising so I don't have to knead it later. Lazy, I know but it works! Fabulous on the grill and it also freezes well. I thaw out what I need and reheat on my panini grill in the kitchen. Only add as much flour as you need so it pulls away from the mixing bowl - I didn't use all that was called for in the recipe. I also added half the sugar because otherwise it's too sweet. Absolutely foolproof recipe!

Graham Cracker Crust I

Perfect, simple recipe for a graham cracker crust! One package in the food processor, add sugar then drizzle in melted butter through the top. This also works great with chocolate grahams when you need a chocolate crust.

Marrakesh Vegetable Curry

Excellent recipe! Used carrot juice instead of orange juice with good results. Left out almonds because of husband's allergy, but next time I'll add some on top of my serving. Used brown jasmine rice underneath. I will keep this and make it again.

Malaysian Mango Chicken Curry

Excellent recipe! I used two rather large chicken breasts and doubled the sauce to good effect. Added garlic (thanks to previous reviewers!) and used rice vinegar instead of cider. I may also have added additional curry powder (I don't measure very accurately sometimes) because we like it spicy. I'll continue to play with this recipe, but the family was happy with my first try!

Best Chocolate Chip Cookies

This is a good chocolate chip cookie! Used 1/2 cup white sugar and 1 1/2 cups brown sugar, added the 1/2 tsp cream of tartar and substituted chopped dried cherries for the nuts (husband is allergic.) Made my cookies a little bigger and it took 14 minutes in my oven. Will try convection the next time to see if it makes a difference, but I have to say after just eating a warm cookie, I will make these again!

Mexican Style Cornbread

This was really good! I used a whole can of Mexicorn and left a little cheese for the top to good effect. Two jalepenos is just right if you carefully clean out the seeds and membranes and chop them up fine. I used half of a red onion and it didn't overpower the cornbread taste. I will make this again!

Chocolate Wave Zucchini Bread

Really, really good! I leave out the nuts because of allergies, but it's still great. I do line the bottom of the loaf pan with waxed paper because I had a problem getting it out of the pan intact the first time I made it. Works great!

Spicy Turkey Burgers

Made these as sliders for my Super Bowl party and they were great! I used pickled jalepeno slices instead of the fresh green chile peppers and they worked well. I will make this again for sure!

Roasted Curried Chicken with Couscous

This was GOOD! I had plenty of spice mixture to coat a 5 lb chicken. Next time I'll give it a few hours to marinate and then it will get 6 stars! I used regular paprika, but will try the smoked variety next time. My kitchen still smells wonderful!

Gramma Brown's Corn Chowder

Used turkey bacon, fried up pretty crisp and added during the last 15 minutes of cooking. 1 1/3 cups cream and 2/3 cup skim milk adds richness and a little extra flour for thickening made it very yummy!

Janine's Best Banana Bread

Yes, this is the BEST banana bread recipe. So easy and so good! I substituted some brown sugar for the white (didn't measure, but probably about a third) and added about a half cup of mini chocolate chips. Nuts would be wonderful in this too, but can't add due to allergies. Sprinkled the top with some cinnamon sugar. Took 70 minutes to bake in my oven, but it was worth the extra wait!
