The Best Lemon Bars

Made these for a rehearsal and everyone LOVED them! I have a Meyer lemon tree in my yard, so I used one of those in the recipe - 2/3 cup of juice from one fruit! Added extra flour to the filling and it baked up perfectly. Might try addition of salt to crust, but I was perfectly happy with no salt. I used an 8"x12" glass baking pan and the thickness of the crust and filling were pretty equal. Did have to bake the crust almost twice as long though. No problem getting the bars out of the pan once I ran a knife along the edge first. I will make these again and again.

Mexican Style Cornbread

This was really good! I used a whole can of Mexicorn and left a little cheese for the top to good effect. Two jalepenos is just right if you carefully clean out the seeds and membranes and chop them up fine. I used half of a red onion and it didn't overpower the cornbread taste. I will make this again!

The Ultimate Chili

Really good chili, just a little soupy. I took the advice of one reviewer and made it a bit more spicy and everyone loved it. Also tried adding the cornstarch to thicken it up, but it wasn't nearly enough. Might add less liquid or add more cornstarch next time. I also used ground turkey. Try this with the Mexican Cornbread recipe!

Chicken A La Orange

Cut the recipe in half and still had way too much sauce! Might be better with the addition of some bell peppers and onions, then served over rice. Orange flavor was a little bitter, but I don't think I'd add any sugar. Not a bad recipe, but not very exciting.

Cheesy Creamed Spinach

Really simple and tasty recipe. I added more garlic and onion than called for. I didn't have provolone cheese, so I tossed in a handful of grated Mexican cheese (cheddar, jack, asadero and queso quesadilla) which tasted great. I would try harder to squeeze out more moisture from the spinach next time so it isn't so runny, otherwise my family was very happy with this dish.

Favorite Banana Blueberry Quick Bread

Really nice and easy quick bread! I used a cup of fresh blueberries and omitted the pecans (allergies) to good effect. I liberally sprinkled the top with cinnamon sugar, which made a nice crunchy finish. Give this one a try and it will become a favorite!

Chocolate Mint Brownies

I used the Ghiradelli Triple Chocolate mix as the base, one of the best packaged brownie mixes ever! I didn't melt the butter, just let it come to room temp and mixed it with the powdered sugar to make it fluffy. I added 1 1/2 tsp. peppermint extract and no food coloring. Finally, I chilled the brownies before adding the chocolate topping. This was a huge birthday hit for a friend who loves mint chocolate.

Gramma Brown's Corn Chowder

Used turkey bacon, fried up pretty crisp and added during the last 15 minutes of cooking. 1 1/3 cups cream and 2/3 cup skim milk adds richness and a little extra flour for thickening made it very yummy!

Roasted Curried Chicken with Couscous

This was GOOD! I had plenty of spice mixture to coat a 5 lb chicken. Next time I'll give it a few hours to marinate and then it will get 6 stars! I used regular paprika, but will try the smoked variety next time. My kitchen still smells wonderful!

Shrimp Scampi Bake

Unlike some of the reviewers, I kept the amount of butter the same. I found it was just enough to coat the linguine I made very nicely and something to dunk the bread in! I used cilantro instead of parsley and we liked it a lot. Next time I would cook the shrimp a little less and would add some crushed red pepper for heat.

Spicy Turkey Burgers

Made these as sliders for my Super Bowl party and they were great! I used pickled jalepeno slices instead of the fresh green chile peppers and they worked well. I will make this again for sure!

Chocolate Wave Zucchini Bread

Really, really good! I leave out the nuts because of allergies, but it's still great. I do line the bottom of the loaf pan with waxed paper because I had a problem getting it out of the pan intact the first time I made it. Works great!

Zucchini Bread with Coconut and Chocolate Chips

This bread is pretty good and easy to make. I used 2 cups whole wheat flour and 1 cup all purpose flour and the texture of the bread wasn't too heavy. I would probably add some cinnamon to the mixture next time for added interest.

Dijon Garlic Salmon

The onion and garlic were much too strong when simply sliced and placed on top of the mustard. I would try sauteing them or leave them off completely, although I'm not sure I'll try this recipe again. Much better ways to cook salmon out there!

Tofu Parmigiana

My family is trying to eat more vegetarian meals, and incorporate tofu more often. Normally I would make this with eggplant, but this is a good variation. I followed the advice of other reviewers and used extra firm tofu, which I drained, sliced and froze. I also coated it with flour, then egg, then breadcrumbs and they stayed put. I baked the slices in the oven with some olive oil spritzed on and they browned nicely. We like lots of sauce, so I used a 15 oz. can of tomato sauce and doubled the spices. Baking it in my loaf pan was perfect and it cut and served without a mess. Next time I'll add some red pepper flakes to the sauce as we like things a little spicy, but overall this is a great recipe.

Warm Flourless Chocolate Cake with Caramel Sauce

Very easy and very yummy! No problems with overbaking when I followed the recipe and the cake had a great dark chocolate flavor and good texture. I made the caramel sauce, but maybe should have cooked the sugar a little longer. The consistency of the sauce is thinner than I would like, but the flavor is good. Some vanilla ice cream finishes this off nicely. A keeper.

Malaysian Mango Chicken Curry

Excellent recipe! I used two rather large chicken breasts and doubled the sauce to good effect. Added garlic (thanks to previous reviewers!) and used rice vinegar instead of cider. I may also have added additional curry powder (I don't measure very accurately sometimes) because we like it spicy. I'll continue to play with this recipe, but the family was happy with my first try!

Magic Mango Bread

Really good recipe! I made only one loaf and used 1/2 cup brown sugar instead of 3/4 cup white sugar. Two eggs as well, plus some ginger because I like it. My husband can't eat nuts and my daughter won't eat raisins, so I threw in some Craisins to good effect. My mango pieces stayed mixed throughout, perhaps because they were small. I will make this again, for sure.

Aunt Mary's Eggplant Balls

I would cut up more eggplant next time and cook it a little longer. Needed to add more breadcrumbs even though I used only one egg. I also added some crushed red pepper when I mixed it all up. I sauteed some sliced red bell peppers with onions and added some tomato & basil spaghetti sauce, then the eggplant balls and served them on hoagie rolls for a veggie Italian sandwich. Yum!
