Creamy Banana Bread
Made this for a coffee morning and it was well received. I read some of the reviews and made the following changes - six small bananas, doubled the filling and cut 3 T butter in to make it crumbly, and added some cinnamon to the batter. I also used 3/4 cup white sugar and 1/2 cup brown sugar. I had some salted pecans that I chopped up and that bit of saltiness with the brown sugar really worked for me in the filling and on top.

Allison's Trout
Having never cooked trout before, I searched through the recipes and found Allison's Trout. So glad I did! I was only cooking two fillets, so I reduced the amounts and made a few changes to incorporate the ingredients I had. No lemons, so I substituted orange/pineapple juice. I also thinly sliced a shallot which I cooked briefly in the butter before adding the mushrooms and juice. I served this with some mashed potatoes and steamed green beans and decided this meal was a keeper. Might try adding some thai chili for heat the next time, but this is very, very good as it is.

Best Buckwheat Pancakes
Best pancake recipe ever! I don't have access to buttermilk where I live, so I have successfully substituted sour milk (milk plus some vinegar) or laban (a liquid yogurt used in the Middle East.) I double the recipe so we'll have extra pancakes to heat up during the week!
