Marinated Grilled Shrimp

These were awesome! I didn't have much time to prep before grilling - maybe 30 or 45 minutes. I used what I had on hand, meaning I subbed ketchup, and I used a few pinches of a spicy blend of herbs, plus about a 1/2 cup beer for good measure. Covered it all and let it marinate in the fridge for 20 or 30 minutes. Skewered and grilled following the directions and they knocked everyones socks off. This is my new favorite!!

Vegetarian Gravy

I love, love, love nutritional yeast - based gravys! I made this to go with buscits & gravy and it was awesome. For personal preferences, I made the following changes: lightly roasted the flour in the pan before adding the yeast (increased to 1/3 cup), then added the 1/2 cup of fat, by using 1/4 c oil & 1/4 c butter. I subbed braggs for soy sauce as a healthier option and reduced that by about a tablespoon. I added about a tablespoon of mince garlic, but no onion because I was out. I also ended up adding a little more water as I went along in order to get the consistency that I wanted. Yum!

Busy Day Barbeque Brisket

Oh man, this super easy recipe nailed the BBQ flavor! It was also awesome to leave the house at 8:00 a.m. for a busy day knowing that I'd already prepared the birthday dinner I was serving in the evening. Once I got home, I only had about 10 minutes of work left shredding the meat and toasting the buns. It was a big hit.

Smoked Salmon Chowder

This was awesome! I wanted to make this for dinner, but knew that I would be short on time in the evening, so I tried it in my slow cooker. I cooked the bacon, onion & celery in a pan as directed, then added it to my slow cooker with the water, chix stock that I subbed for fish stock, and spices. Once that mix had a chance to heat up, I added the roux, gave it an hour or so to thicken, then threw in the remaining ingredients of Salmon, corn, etc. I like my chowder w/ a wee little kick, so I also added a little cayanne pepper & paprika. The finished recipe made a ton of chowder... more like 10 - 12 servings, and was a huge hit with my husband & bro-in-law.

Banana Cream Pie I

This turned out amazing! I made a crust with nilla wafers which went perfectly with the pie filling. The flavor was spot-on. Next time I may add a wee bit more thickener to the mix as mine was just slightly runny.

Tasty Lentil Tacos

This is amazing! I made this filling as a vegetarian option for a taco dinner party. This filling was way more popular than the beef or shredded chicken! Tonight it's tacos just for us, and we are not bothering with the meat - lentils all the way. Just an update to my review to add that this recipe has become almost a weekly staple in our house. We've been doubling the recipe and using leftovers in taco salads, quesedillas, nachos, etc. Soo good!

After-Thanksgiving Turkey Soup

This was delicious! I felt like using my slow cooker and letting the aroma fill the house. I put the carcass, some water and chicken broth in the slow cooker and set in on low for about 8 hours - the meat fell off the bones and the broth was amazing. Next, I followed the instructions with the veggies, but I added garlic, peas & carrots. We are still eating the leftovers! Turkey pot pie tonight!

Warm Crab Parmesan Dip

This is sinful and worth it! I modified the published recipe by using fresh crab, a TON of garlic, and I added some Old Bay Seasoning. The dish brought lots of compliments on Christmas Eve!

Fresh Pumpkin Pie

This pie was amazing! I froze the leftover pumpkin puree so that I won't have to use canned pumpkin at all this winter! The honey is a great touch - sets off the flavor perfectly. This will be my standard recipe from now on.

Quinoa Black Bean Burgers

These were great! The recipe is very forgiving. I added extra vegetables and thought the mx was too wet, so I decided to add an extra can of black beans, then another egg. I ran out of bread crumbs, so I added some panko and crushed saltine crackers. Then, since I was getting so crazy with it anyway, added some leftover feta from the fridge and nutritional yeast (b-12 vitamins, protein & more fiber). I baked them @ 400 for 30 minutes as another reviewer suggested, than fried them for a few minutes on each side. They came out great - not mushy at all. This version yielded 7 BIG patties. We ate 2 and froze the others for later. Thumbs up!

Easy Batter Fruit Cobbler

This turned out great. I did make a few changes to increase the fiber content. Instead of 3/4 c white flour, I mixed white flour with wheat flour, rolled oats and oat bran for a total of 1c. I also increased the sugar and milk to 1 c. I was a little worried because the batter was very runny, but it turned out just fine.

Vietnamese Style Vegetarian Curry Soup

This was deeeelicious! However, I found the tofu frying process to be a pain. I will certainly make this again, but I'll leave out the tofu. The potatos give it plenty of texture.
