Salsa Chicken

LOVED LOVED LOVED this! F All of my kids loved it and my youngest kept telling me he loved it so much! I did make one substitutions from the original recipe and that was 2% mexican blend shredded cheese as that's what I had on hand. This is a keeper and a new regular to our meal rotation! The kids all suggested that next time I put some olives on with the cheese, and I tend to agree! Otherwise, FABULOUSLY EASY!

Eggplant Parmesan II

Took some tips from another reviewer and sweat the eggplant first by peeling, slicing and sprinkling with coarse salt and let sit for a half hour. Rinse well and dry. Then dip in egg and then into seasoned crumbs. To give it a little extra crunch I replaced half the bread crumbs with panko and added some extra Italian seasoning and a little garlic powder. Baked for 7 minutes per side at 450 and then followed the rest of the recipe and it was the best Eggplant Parmesan any of us had ever had. All 7 kids loved it and my sister who hates eggplant even loved it! Definite keeper!

Chicken Makhani (Indian Butter Chicken)

doubled the recipe for my large family. Even the kids liked it. I did follow some other reviewers suggestions and changed/added a couple ingredients to make it more authentic. Changed the cornstarch to ground cashews. Added fenugreek and also used fat free versions of dairy products instead of full fat. Will be making this one again!

Quinoa and Black Beans

LOVED LOVED LOVED this! First time having quinoa and what a wonderful introduction! All of my kids loved it and my youngest who's 5 had 4ths he loved it so much! I did make two substitutions from the original recipe and that was chicken broth as that's what I had on hand. I don't think it would honestly change the flavor all that much either way. And I used olive oil instead of vegetable oil. This is a keeper and a new regular to our meal rotation!

Apple Pie

Flavor was great, amount of apples perfect. I used premade crusts from the grocery store. This was the first pie I made that did not get a soggy bottom. This is a keeper and the family loved it :D

Grilled Hawaiians

Quick, easy, tasty, fairly nutritious and inexpensive. A keeper in a house with 8 kids!!! No changes necessary, we just serve with a side salad.

Sturdy Whipped Cream Frosting

Black Beans and Pork Chops

Awesome recipe. Wanted a quick and easy recipe for chops and this fit the bill. We decided we'll try it with a pork butt in the slow-cooker next month! Great flavor, quick meal. Definitely a keeper! Served with brown rice

Pork Tenderloin with Mustard Sauce

Turned out great! Didn't have time to marinade over night, but did for 8 hrs. Made mustard sauce about an hour before needed, should have made the day before as well. I give 5 stars because it was fabulous as was, but I know will be even better the next time I make it. I also took 3-4 oz of the marinade that had been in with the roast for 40 min and made gravy with that and a packet of mushroom gravy mix, water and some sauteed mushrooms. This was some of the best gravy I've made in a while. Even the kids loved all of it (except the mustard sauce). Served with mashed potatoes and steamed broccoli for a wonderful dinner! This is definitely a keeper and something you could feed to vip guests at a dinner party!

Greek Seasoning

wonderful! Used to make lamb skewers (2/3 seasoning put through grinder then added to 2# ground lamb +3 Tbsp lemon juice, set in fridge 8 hrs then skewer and grill) and it turned out fabulous! Tasted a lot like gyro meat!

Spicy Honey Mustard Pork Roast

Loved it! Even my kids thought it was great! Definite keeper. The ONLY thing I changed was I cooked it in my counter top rotisserie rather than baking it. This gave an even crust all the way round.

Braised Balsamic Chicken

I didn't make this recipe exactly as written as I made some changes after reading comments. Made with chicken stock and balsamic vinegar, added in some mushrooms and fresh garlic, and served over angel hair pasta. I also sprinkled some parmesan cheese over top and it was fabulous. I only gave 4 stars as I changed it to suit my family's needs. But it turned out so well that they all said I needed to make it again.

Spinach, Sausage and Cheese Bake

had to make some subs due to what I had in the pantry vs. what the recipe called for. The flavor was good, added some garlic and onion to the meat sauce. Used fresh spinach and mixed the cheese and spinach in the food processor. Red sauce came out a little soupy because of the tomatoes. There were no leftovers and my youngest begged me to make it for dinner the next night too. Next time I'm going to add some pasta into the mix...

Wonderful recipe. I gave it 4 out of 5 because I don't use the chicken and omit the garlic salt of course. I make a pork roast rubbed with a paste of fresh garlic, ginger and lime juice and then sliced thin after cooking instead.

Cinnamon Rolls II

Great base recipe. I did make some changes, in that I use stevia and vanilla powder in the dough and splenda brown sugar blend for the brown sugar. Otherwise, wonderful recipe. I only made the changes after making them exactly as the recipe states. Either way, turn out wonderfully!

President Ford's Braised Eye Round Steak

good flavor, turned out a little dry which toughened the meat. Will make again, but cook less time. Otherwise would have given 5 stars. Subbed a cabernet for the burgundy and beef broth for consume as that's what I had.

Roast Leg of Lamb

only giving 4 stars because I added thyme and mint, rubbed the outside of roast with a little bit of olive oil before seasoning and stuffed garlic in both the top and bottom of the roast. Turned out absolutely perfect and will be making my leg of lamb this way from now on. Great base recipe to give a beginner a good stepping stone! My one suggestion is to use a leave in digital leave in type thermometer that will measure as it cooks so that you get a perfectly cooked roast every time.
