Pork Tenderloin with Mustard Sauce

Turned out great! Didn't have time to marinade over night, but did for 8 hrs. Made mustard sauce about an hour before needed, should have made the day before as well. I give 5 stars because it was fabulous as was, but I know will be even better the next time I make it. I also took 3-4 oz of the marinade that had been in with the roast for 40 min and made gravy with that and a packet of mushroom gravy mix, water and some sauteed mushrooms. This was some of the best gravy I've made in a while. Even the kids loved all of it (except the mustard sauce). Served with mashed potatoes and steamed broccoli for a wonderful dinner! This is definitely a keeper and something you could feed to vip guests at a dinner party!

Pumpkin Pancakes

I've had better pumpkin pancakes. A bit too dense and had to add extra seasoning to the batter as it was very bland tasting.

Mushroom Chicken Piccata

Greek Seasoning

wonderful! Used to make lamb skewers (2/3 seasoning put through grinder then added to 2# ground lamb +3 Tbsp lemon juice, set in fridge 8 hrs then skewer and grill) and it turned out fabulous! Tasted a lot like gyro meat!

Black Beans and Pork Chops

Awesome recipe. Wanted a quick and easy recipe for chops and this fit the bill. We decided we'll try it with a pork butt in the slow-cooker next month! Great flavor, quick meal. Definitely a keeper! Served with brown rice

California Chicken

I marinated mine in a cuban garlic and lime marinade then grilled it on "the george" to reduce the "bad" fat in it. Used lower fat cheese. We all liked it. Will make again, probably marinading in lime and cilantro marinade next time!

Thai Red Chicken Curry

very little flavor as written. had to add way more curry paste. found it's much better if it sits overnight and is reheated the next day. will try again with different veggies and making curry sauce the day before.

Chicken Makhani (Indian Butter Chicken)

doubled the recipe for my large family. Even the kids liked it. I did follow some other reviewers suggestions and changed/added a couple ingredients to make it more authentic. Changed the cornstarch to ground cashews. Added fenugreek and also used fat free versions of dairy products instead of full fat. Will be making this one again!

President Ford's Braised Eye Round Steak

good flavor, turned out a little dry which toughened the meat. Will make again, but cook less time. Otherwise would have given 5 stars. Subbed a cabernet for the burgundy and beef broth for consume as that's what I had.

Quinoa and Black Beans

LOVED LOVED LOVED this! First time having quinoa and what a wonderful introduction! All of my kids loved it and my youngest who's 5 had 4ths he loved it so much! I did make two substitutions from the original recipe and that was chicken broth as that's what I had on hand. I don't think it would honestly change the flavor all that much either way. And I used olive oil instead of vegetable oil. This is a keeper and a new regular to our meal rotation!

Salsa Chicken

LOVED LOVED LOVED this! F All of my kids loved it and my youngest kept telling me he loved it so much! I did make one substitutions from the original recipe and that was 2% mexican blend shredded cheese as that's what I had on hand. This is a keeper and a new regular to our meal rotation! The kids all suggested that next time I put some olives on with the cheese, and I tend to agree! Otherwise, FABULOUSLY EASY!

Baked Sweet Potatoes with Ginger and Honey

I actually didn't follow the recipe perfectly because I messed up. But hey, thats okay, because it turned out great! I sliced my sweet potatoes, used golden instead of ruby (or actual sweet potatoes instead of yams). Eyeballed the ginger and used only 1/4 tsp cardamom and as per other user suggestion 1/4 tsp nutmeg. I also used olive oil instead of walnut as that's what I had. Added about 1 tsp each of lemon juice and white wine. I boiled the potato rounds for about 7 minutes then coated them in the glaze mixture and broiled until browned. Tasted good enough to make again. Served with roasted boneless leg of lamb and a salad of organic baby greens with herbs, gorgonzola, craisins, apple dices and a garlic vinegarette.

Roast Leg of Lamb

only giving 4 stars because I added thyme and mint, rubbed the outside of roast with a little bit of olive oil before seasoning and stuffed garlic in both the top and bottom of the roast. Turned out absolutely perfect and will be making my leg of lamb this way from now on. Great base recipe to give a beginner a good stepping stone! My one suggestion is to use a leave in digital leave in type thermometer that will measure as it cooks so that you get a perfectly cooked roast every time.

Peppered Bacon and Tomato Linguine

I'm only giving this dish 3 stars because the first time I made it it was lacking and I had made it according to the recipe. The second time I made it I used the recipe as a guide and made it my own. Second time around I used 1/2 lb peppered bacon, drained off grease, 1 box bowtie pasta (prepared), 2 cans italian diced tomatoes, 2 cans petite diced tomatoes, 2 Tbsp. dried basil, 1/2 cup fat free half and half, 1 tsp. onion powder, cracked black pepper to taste and a clove of fine chopped garlic. Everyone had seconds the second time around (no one cared for it that much the first time I made it) and there was just enough left for my hubby to take to work for lunch. Much better reception for it when I changed it up.

Spinach, Sausage and Cheese Bake

had to make some subs due to what I had in the pantry vs. what the recipe called for. The flavor was good, added some garlic and onion to the meat sauce. Used fresh spinach and mixed the cheese and spinach in the food processor. Red sauce came out a little soupy because of the tomatoes. There were no leftovers and my youngest begged me to make it for dinner the next night too. Next time I'm going to add some pasta into the mix...
