Piggy-iggy Casserole

This turned out surprisingly delicious, but I did modify it a lot to suit my family's tastes. The main thing I did was precook the zucchini (steamed for about 5 minutes) & brown the ground beef. (I substituted 1 pound of ground turkey.) Cooking raw ground beef/turkey w/o browning never seems to turn out well for me. I omitted the water & salt (unnecessary) as well as the jalapeno pepper (my family doesn't do spicy) & used just 1 teaspoon of black pepper. I also substituted reduced fat Cheddar slices for the American cheese. I assembled the casserole as directed, then put it in the oven for just 5 minutes. Then I took it out to put the basil on it, & stuck it in the oven for 5 more minutes. It was ready to eat.

Skin-on Savory Mashed Potatoes

Maybe it's my fault for using skim milk, fat-free sour cream & low-fat butter substitute, but this tasted too "light" to me, like it had no substance or "oomph".

Blueberry Dump Cake

Chicken and Wild Rice Slow Cooker Dinner

This cooked well (the chicken was moist & tender, the rice was cooked & had the right amount of moisture to it, the carrots were not mushy), but I personally did not like the taste of the rice, although normally I like wild rice. My family was not enthused about this, either. I used 2 boxes of wild rice & supplemented w/ 1 cup instant brown rice. I think you could get by w/ 3 boxes of wild rice, though. Also, I would omit the carrots, they don't add anything to the taste. I think this would taste better made w/ plain rice.

Delicious...I omitted celery & used low-fat soup & fat-free sour cream, & it did well...except the chicken was too tough. Next time I'll shorten the cooking time and/or pound the breasts flat.

Creamy Slow Cooker Green Chili Chicken Soup

The best thing I've ever made in my slow cooker! The only reason I didn't give it 5 stars was because of my picky children. The only thing I did differently was to not cut up the chicken breasts beforehand; I just put them in whole because in the past my pre-cut chicken has turned out dry & tough in the slow cooker. Putting them in whole made them tender and easy to shred/cut up before serving.

Spinach Cheddar Potatoes Au Gratin

Thanks for providing a recipe that came out nearly perfect. I have never been successful w/ tradional au gratin potato recipes, but this one was different. It's a keeper! The steps can seem labor-intensive, but they are easy to follow & the end product is worth it.

Quick Rice Pilaf

This was delicious! I was looking for a great chicken & rice recipe & found it here...so moist, too. I did modify it to suit my family's taste, however: I did omit the hot sauce & next time I will also leave out the pepper...it was too hot & spicy. Also, I substituted a carton of chicken broth for the bouillion cubes (I personally don't use them because of the MSG.) Because of the amount of broth, I didn't need to add the water. Also, used just one bag of vegetables & that was plenty.

Terrific Turkey Chili

This is the tastiest chili I've ever made. I think this will become a favorite in our home. My husband doesn't like "hot-spicy", so I omitted the green chile peppers & chili pepper flakes, & it was delicious. It's a welcome change from the usual chili recipes. I served it over rice & found it substantial without the beans. I think the key to this recipe's rich flavor is the beef broth. I recommend using a brand without MSG, such as Kitchen Basics Beef Stock (that's what I used).

San Antonio Salad

I wanted to like this recipe, & enjoyed the crunch of the chips in it. However, I found it too dry, it needed some sort of "dressing." There's another taco salad recipe I like better that uses French dressing. Sorry.

Spaghetti Pizza Lasagna

I had high hopes for this recipe, but it just did not turn out well. My husband & mother-in-law liked it, but my kids and I did not. The taste of the pasta sauce was too strong, & the casserole's consistency was too watery instead of held together. The top, w/ the cheese & ground beef, was almost overdone, while the middle & bottom, w/ the egg mixture & pasta, was underdone. I will look for a better baked spaghetti recipe.
