Maple-Soy Glazed Salmon

This was just what I was looking for. I used tamarind soy sauce and some fresh cilantro. I took another reviewer's suggestion. I seared it in a sauté pan. Then broiled about third rack from broiler. 10 mins, basting every two minutes. Then just before done, I put it close to boiler to brown more. Then I added some cornstarch to the remaining sauce to thicken. Yummy

Indian Curried Barley Pilaf

I am glad I read the reviews. I also doubled the spices, used carrots and corn with a few raisins. I had about a half cup of cooked Italian ground sausage, so I tossed that in. It really added alot of flavor.

Rhubarb Barbeque Sauce

Okay, I really like this. I used Pepsi Max and 1/4 teaspoon almond extract. Used smoked chipolte hot sauce in place of powder. Skipped the liquid smoke and added 1/2 teaspoon smoked paprika. I thickened it a bit after I pureed the sauce with about 1 Tablespoon of cornstarch disloved in a small amount of the sauce. Stirred into remaining sauce, heated until just to start to boil and thicken. Stir constantly to prevent burning.

Chutney Chicken

Oaky, so I had to improvise as I did not have onion soup mix. Quick google search and I made one with powder, beef boullion granules, garlic powder and dried parsley. Recipe called for dried onion flakes, but I did not have any. So I finely chopped one small onion. I mixed the soup mix, onion and one jar Trader Joe's mango chutney in food processor just to reduce size of chunks. Poured it over skinned bone in thighs. Yummy. Served with rice pilaf and Trader Joe's Birds Nest. Son loves those vegetable birds nest.

Greek Orange Roast Lamb

This was very good. I used stone ground dijon mustard from Trader Joe's and a large orange for fresh squeezed. This was more than enough for a whole boneless leg. Served at Christmas dinner to a very happy family. I might try fresh oregano next time and reduce the pan dripping for a sauce.

Baked Ham with Maple Glaze

Great sauce. I added brandy in place of vinegar. I poured it over a spiral ham for Xmas dinner. I reduced the pan drippings and thickened with some flour for a sauce. It was a hit with the family. A keeper!

Pumpkin Apple Streusel Muffins

I baked it in a bundt pan without the topping. I made a vailla orange glaze from powdered sugar, milk, vanilla and a touch of triple sec. Pour that over cooled cake. Family loved it.

Cornbread Chicken Pot Pie

I used the topping for my own pot pie. I put it a larger, shallow corning ware dish insted of pie plate and there was plenty of corn muffin to cover it. My son really enjoyed it. Much quicker than making a pie crust.

Easy Batter Fruit Cobbler

Wow, best and easiest cobbler ever....I used three cups of fruit in a deep dish pie plate. Two cups sliced strawberries, 1 cup raspberries. I followed reviewers' suggestions of adding melted butter to batter after spreading it around the plate. I also used 2 T butter and 2 T smart balance. Plus I put about 1 t vanilla in batter and 1/4 t nutmeg....On top I sprinkled 1 T of sugar crystals which melted nicely

Cran-Broccoli Salad

Very good, but I took another reviewer's suggestion; I used lower fat mayo in place of the oil. I used chives instead of green onion, because I had it on hand. By mistake I used 1 tblspoon of maple syrup, so mine may have been a bit sweeter. Cranberries really add to flavor

Sour Cream Macaroni Salad

Very good pasta salad, but I did change it. I used adobo seasoning and about a 1/2 teaspoon dill. I also used one chopped shallot instead of onion and orange pepper in place of green. Also added celery and no pimientos, as I did not have any..

Wine Baked Potato

Very good recipe. I do a sliced foil wrapped potato on the grill. I use montreal steak seasoning, but no liquid beyond buttter. So I was anxious to try these. I used marsala wine, onion and a few slices of shallot. The family enjoyed, so I will do again. I be you could use chicken broth in a pinch.

Chocolate-Chocolate Chip Bacon Cookies

I really liked this cookie. I used regular bacon because it was in the fridge. I crushed it fine, maybe too fine because the bacon flavor was barely evident. But it is one of the best choco-choco chip recipes. Fudgy center. I made my heaping tablespoons and cooked 10 mins w/convenction on. Just right. Maybe next time I will leave the bacon abit larger. I used unsalted butter for a decadent cookie.

Pasta with Roasted Butternut Squash and Sage

Very good. Wonderful combination of flavors. I used 1/2 a large butternut that I roasted with 1 T maple syrup and 2 T olive oil. I used more squash, so I needed more liquid and I used fat free half and half. I spinkled a few dried cranberries on top. Leftovers yummy without the pasta....

Slow Cooker Adobo Chicken

I really liked this as did my teenage son. I used bone in thighs and removed skin. I added 1 t chopped ginger, 1/2 cup water, 1 T sugar and 3 bay leaves. When it was cooked I boned the chicken. Took all but 1 cup of liquid and thicken with some cornstarch. Then I added the chicken to thickened sauce. The 1 cup broth I used to cook rice....very good

Sloppy Joes II

Yummy. So much better than a package seasoning mix. I added some McCormacks hamburger seasoning. I double the recipe using 1 cup ketchup and 1/2 cup bbq sauce. Teenage son loved it on fat slices of sourdough and american cheese

I did something different. I crushed choc graham crackers to 1 3/4 cups. Then I used 1 cup milk choc chips, 1 1/2 mixed choc and mint chips. I did not use butterscotch chips.

Cheesy Sliced Potatoes

When I print recipes I often put on note on it Ryan likes. Meaning my son liked it. He ate these last night, looked at me and said "write down Ryan really likes!". I added the bouillon granules in the milk, by mistake. But it was great. I used 1% milk and low fat sour cream. Fresh minced onion and one crushed garlic in the potates while cooking. Then a little garlic salt in the milk with some pepper because we like garlic.

Ramen Cabbage Salad

I love this and I can get my teenage son to eat cabbage becase he likes it too. I use a package of slaw mix, rice wine vinegar and 2 teaspoons of sesame oil to give more asian flavor. Throw the seasoning out..too much sodium...
