Chef John's Minestrone Soup

I usually don't like minestrone soup that is served at most restaurants and I made this soup at the urging of my husband. I LOVE this soup. It wasn't as hard as I thought it might be and it does take some time to make. I watched the video and I made it exactly like he said (the first time I made it I added too much pasta, but it was still good). I used the Swiss chard as listed and although I don't think I had ever had Swiss chard before it really added to the dish. I have and will make this soup again in the future.

Tomatillo Salsa Verde

My husband loves the salsa verde served at one of our local hole in the wall taco joints so I decided to make this recipe. He LOVED it. It was exactly like what we get at the taco restaurant and maybe even a bit better. I will certainly make it again.

Risotto with Truffle and Parmesan

I had never made risotto before and I wanted to find a good basic recipe. Although time consuming, as I expected it to be, this is so good and creamy and exactly what I was looking for! I left the truffle out because I didn't have any and the first time I made it I added a bit of extra cheese. My husband thought it was way too rich so when I made it the second time I used the exact amount of cheese the recipe called and it was much better.

Jamie's Cranberry Spinach Salad

This was the highlight of our Thanksgiving dinner! Unfortunately it set the bar very high for the rest of the food which was okay! I will definately make this a part of my dinner party offerings.

Midwestern Pork Tenderloin Sandwich

Just like I remember from back home in Indiana. I did make an adjustment after the first batch. I replaced half of the black pepper with paprika. Excellent!

Honey Peach Pie

This was great. The peaches we picked this year were severly lacking in flavor and we thought they were going to be a total loss, but this recipe made the best of the peaches and I think that the peach snapps gave them the flavor they were missing. We couldn't stop eating this!

Fresh Green Beans, Fennel, and Feta Cheese

This was very good. My husband who usually likes only the basic of ingredients in a food even enjoyed them. The only problem I had was the amount of olive oil seemed to be a bit much so next time I will cut it down. But other than that good job!

Dill Pickle Sandwich Slices

These had good flavor but too sweet to be good on hamburgers. I think that I will take these and make sweet relish out them. It will taste good on hot dogs.

Burger or Hot Dog Buns

These are excellent. I just made them into hamburger buns and used my breadmaker. Other than using the breadmaker I followed the recipe exactly as written.

Sweet Dinner Rolls

I made these exactly as they are described with one difference and that is I made them into balls instead of cresent shaped. My whole family loves these. I am constantly being begged to make more of these. They are also very easy to make!

Spicy Slow Cooker Black Bean Soup

Wow my family loved this soup! I made it exactly as described (we don't mind a bit of heat). I can see topping this off with onions, cilantro, salsa, a bit of cheese, and/or tortilla strips and I think it might even be better. I had some left over and so I stored it overnight. What I noticed was that the beans soaked up more of the soup so it was not as soupy the second day but it still tasted great!
