Cuban Ropa Vieja

Reviewed: May 17, 2011
This wasn't bad, but I wouldn't call it good either. I made it as written except I did add extra garlic as recommended by other reviewers. Once it was on the dinner table we found it bland and uninteresting, and added salt and pepper (not much help). The best thing about this dish was the awesome smell it filled the house with all day. Too bad it didn't live up to its smell!

Spiced Butternut Squash Soup

Reviewed: Nov. 18, 2009
I must be doing something wrong. I wanted to like this soup so much that I tried it twice. The first time I made it as written and it came out blah, so the second time I used sweet potato instead of russet, doubled the spices, added cinnamon, and used curry instead of cayenne. Came out grainy and tasted ... strange. Can soup be both bland and overspiced? It tasted like my spice rack smells. I blame myself since everyone else seems pretty happy with the result. But I won't be trying again.

Triple Berry Crisp

Reviewed: Jul. 12, 2009
Simple and yummy. I made a half batch with 3 cups of fresh blueberries. I added 1 tsp cornstarch with the sugar and melted the butter. While I was assempling it I worried I didn't have enough crisp to do the bottom and top layers but a very thin pressed layer in the bottom of the dish was plenty to get the layered effect and leave just enough to cover the top. Came out tasty and will certainly make it again!

Easy Coq Au Vin

Reviewed: Dec. 20, 2006
This came out bland and uninteresting. I made it with boneless skinless chicken breasts, merlot, and shallots instead of onion, and served it over steamed rice. Hubby and I agree this one won't be attempted again.

Hot Peanut Sauce

Reviewed: Nov. 21, 2006
I basted my chicken with this sauce before grilling, and served it as dipping suace on the side, and it was really good. I don't have much experience with peanut sauce, but I liked this one and will make it again.

Famous Butter Chicken

Reviewed: Nov. 21, 2006
I was very hopeful about this recipe, but found it to be a little soggy and very bland. Nothing special, won't make it again. I feel like the negative reviews I read are right on for this one.

Florentine Artichoke Dip

Reviewed: Nov. 21, 2006
This dip turned out better than the restaurant version. I used frozen spinich and canned artichokes. Had to cook 10 min longer than anticipated to get browned around the edges. The double-batch I made for poker disappeared. Thanks for sharing this treasure!

Sesame Pasta Chicken Salad

Reviewed: Nov. 21, 2006
This recipe is the reason I started using this site. It is GREAT. I make it without the green onion, and sometimes with chicken, sometimes without. It's even better the next day if you have time to let it sit in the fridge. Perfect for a b-b-q or potluck.

Apple Dumpling Cake

Reviewed: Nov. 21, 2006
This was delicious, and so easy. I cut the recipe in half and in half again, since I was cooking for 2, and cooked it in a 1.5 qt casserole dish-- cooking time was about 30 minutes for me. I used 1 large apple, which I put in a baggie with sugar, brown sugar and cinnamon to coat, as suggested by previous reviewers. I substituted half the oil with applesauce. I did a layer of apples in the bottom of the dish, poured a little batter in, then did the rest. It came out terrific! Definitely will be making this again.

Four Cheese Macaroni

Reviewed: Nov. 21, 2006
We loved this mac and cheese! I roughly doubled the cheeses and did not use the egg. I also used less than a lb of pasta because it wasn't all going to fit in my casserole dish. It turned out beautifully, and we are enjoying leftovers. Definitely will be my new mac and cheese recipe!

Creamy Pesto Shrimp

Reviewed: Aug. 15, 2006
Followed the directions, except I made my own pesto. This was that illusive delicious AND easy recipe! It will definitely be in high rotation at our house.
