Spanish Flan

I joined this site bcuz of this recipe!! I just chose it bcuz I had 2 cups of reg. milk that were about to expire. Changes I made: substituted the evaporated milk for 16oz of reg. milk and added an extra egg and baked for only 30min. FLAN TURNED OUT TO BE MY MOM'S FAVORITED DISH and she loooved this! She ate 3 pieces and the only reason she stopped was bcuz she wanted to leave some for breakfast :)Thank u so much for this recipe! NOTE: the flan was bubbling and making holes in the oven which is why I took it out early...Does anyone know why?

Almond Lemon Chicken

My family and I loved this dish. I wish I had made more sauce though, it had a great taste. It was like others said messy with the frying, I have spots of oil everywhere on my oven. DEFINITELY reduce the almonds, I used half a cup and I still thought that was a lil much. I didn't have red flakes so I just added paprika. **Mistake I made: The recipe didn't call for any salt so I immediately assumed it needed it, so my "salt shaker loving self" added salt. Big mistake, you could taste the salt, it would have been just fine w/out it.

Thai Cashew Chicken

WE LOVED IT! Changes I made: used Oyster sauce instead of fish sauce, brown rice instead of jasmine, put chicken broth instead of water in the sauce, diced the cashews and roasted them w/ cooking spray (1st time i made this i did it w/ whole cashews & i did not like them but they taste great diced). I also added broccoli with sauce. Also, I put some chicken broth in the marinade because I loved the sauce last time and wanted more the 2nd time I made it. Thank you so much for this!!

Spinach Ziti

My sister & I liked this recipe. I fried chicken cubes...seasoned them with oregano, thyme, & black pepper; I put Italian diced tomatoes & the red pepper flakes over the chicken then followed the recipe. I doubled the amt of cream cheese. I will double the amount of spinach next time. Thanks for a quick main dish!

Cheese and Broccoli Chicken Soup

I really liked this recipe. I also added potato to mine. I read others reviews & did the following: Sauteed a diced onion & two cloves of garlic in only 2 tblspons of butter (to keep it healthy), then added the chunks of chicken to brown with the onions & garlic while adding spices (black pepper, salt, white pepper, pinch of nutmeg, dried parsley flakes, Tony's, and one cube of chicken bouillon) once the chicken was a little browned, I added cans of chicken & veg. broth. Let that simmer for a bit until the chicken is tender. I mixed 1 cup of whole milk (cream is too fattening) with flour and added this mixture to the pot. When soup thickened a bit, I added a bag of frozen broccoli & cubes of boiled potato that were boiled while chicken was boiling. Then I added medium sharp cheddar cheese at the end, I only had about 1 cup of cheese but the soup was still amazing!

Sauteed Portobellos and Spinach

so simple & so delicious. I also doubled the dried basil, added 3 cloves of garlic, used normal button mushrooms instead of Portobellos. I omitted the wine and call me crazy but I put 2 tablespoons of whole milk instead and then a tablespoon of cream cheese so it can melt along with the milky/spinachy sauce. yum! My mom and sister loved it!

I added poppy seeds, diced frozen strawberries, wheat germ, flax seed & reduced the amount of sunflower seeds. Used whole rolled oats. Made a mistake by putting this in a 9x13 pan not a SQUARE one so mine turned out very thin & not like "power bars" but tasted good.

Pesto Tuna Salad with Sun-Dried Tomatoes

This was fast & unique. I followed the recipe except I used 1 tablespoon Miracle Whip and two/three tablespoons of prepared pesto in a jar. I usually make my own pesto but since I had the ready-made kind, this recipe was super fast to make. Thank you!

Amber's Sesame Chicken

I was looking for a recipe that had sesame seeds; I loved this. Would be even better with white rice next to the dish. Already had some chopped frozen bell pepper in the freezer. I tripled the sauce & added low sodium soy sauce.I fried the chicken in a mixture of sesame oil & veg. oil. Since I didn't have Chinese five spice powder, I googled what it consisted of & there seemed to be slight variations among the results so I stuck with the one that I had all the ingredients I had in my spice cabinet. My "five spice powder" had black pepper, cinnamon, anise seed, ground cloves & ginger. Turned out wonderful but if I ever get my bands on real Chinese five spice powder, I'd like to try it to see the difference.

Tasty Lentil Tacos

I was shocked that I didn't need to alter the spices or anything in the lentil mixture since oregano & cumin sounded like a weird couple to me. I just added salt when I was mashing the garlic...didn't need it really cuz the chicken broth has enough salt. I didn't have sour cream or lettuce so I just scooped the lentil/salsa mixture in shells, topped w/ cheddar cheese & diced tomatoes. Amazing! Can't wait to eat it for lunch today.

Balsamic-Glazed Salmon Fillets

I can not believe a dish this easy can taste this good! Not only is it easy to make but when u're done, u only end up with about 3 pieces of dishes from making the recipe :) I made it on chicken and used the sauce of 6 servings for 4 boneless chicken breast pieces. (I like more sauce on stuff) I used dried oregano on top and lemon juice instead of white wine (chicken broth would've worked too but it wasn't worth opening a can of broth 4 the little bit required in the recipe). I cooked the chicken for about 30 min & it was toooo dry. I'll definitely make this again but will watch out & try to cook the chicken less. This recipe is now on my rotation of things to cook often.

Parmesan Chicken

Followed everything except added extra spices to bread mixture (thyme, italian seasoning, salted the chicken, celery salt) including the basil plus melted butter & put it with mixture so it held on good to the chicken breasts & got crispy. YUM!

Mulligatawny Soup I

I never thought apple, onion, chicken & milk could be combined to equal something tasty! I used onions that I had diced in my food processor otherwise the diced ones would have been too big in the soup at the end. Shredded carrot better than diced ones. Omitted the flour. Used all of the curry spice (any less would have had no flavor). I left the skin on half of the red apple that I used. Omitted the white rice (used Orzo pasta instead), used full milk instead of heavy cream, and one(or two) chicken bouillon cubes with 4 cups of water instead of chicken broth.I sauteed the chicken in butter 1st, then took out, sauteed the carrots, onions, & celery a little then added water & chicken cube then followed the recipe as written. Oh btw, make sure you heat the milk in the microwave before adding it to the pot. Edited 9-9-09: have since tried it with rice, i like it with orzo more. Also, I make it with canned chicken broth & have found it tasty.

Best Brownies

This is my brownie recipe from now on! I doubled the recipe and made it inside a 9x13 at 350F for 35min).Didn't use the frosting, was already too sweet for me and I only used 1 3/4 cup sugar(less than 2c which is what recipes lists for double). I used 125grams of butter (a little more than a stick of butter), melted in the micro & then I just kept adding veg. oil to make 1 cup. I think I will reduce sugar to 1 1/2 c next time and not add veg. oil if making it for DH because he immediately tasted the oil in it. He hates oil in sweets and prefers butter :)

Ranch Burgers

I loved this burger. Flavor is great. I needed a quick recipe and this was definitely it. With that said, I liked tasting the meat more than I liked the burger, I think i will make it as meatballs where the taste of this meat can shine more...or something in another recipe or on it's own. Haven't quite put my finger on it. But if i need a quick burger recipe, I will make this but if I have more time, I'd probably use another one & save this recipe to make as a separate dish, not a burger. I also doubled the ranch & decreased the crackers because I was using very lean ground beef.

This just did not work out for my husband & I. For all the trouble I went through to make it and hazelnuts are expensive here, he tasted it and said "hmm, yum, zatar." (zatar is a simple lebanese dish of thyme, sesame, sumac...etc.) Zatar is nothing impressive to a Lebanese person, LOL so any dish that he thinks is zatar & has expensive ingredients is not worth my effort or money. It saves well however, I had it for so long then took it to Lebanon to let my mother-in-law try my "home-made zatar"!! LOL

Raspberry Vinegar Chicken Breasts

This just didn't work out for us. The vinegar was too overwhelming. I buy an expensive Lebanese vinegar so could it be that the amount stated are for cheaper (watered out) vinegars?

Soft Sandwich Buns

Amazing, I ate them and was shocked! I used all-purpose flour, added a little olive oil to the batter, added only 1/2c extra flour than what the recipe states while kneading by hand (initially kneaded 3 cups in food processor) and let rise for about 7 hours, LOL long story. 350F for 15 minutes or light brown. I only got 11 small buns, so will probably double the recipe next time to get 12 big buns for hamburgers. Can't wait to make it again.
