Blueberry Zucchini Bread

Too sweet. Reduce sugar by at least 1/2 cup. Not enough zucchini. Increase by 1 cup.

Pineapple Stuffing

This is essentially greasy pineapple bread pudding. The flavor is too sweet for a side dish and it's dripping with butter. Would not make again.

Best corn bread I've tried. Made exactly as described in the directions. Thank you Virginia!

Roasted Beets 'n' Sweets

Reviewed: Sep. 26, 2007
Beets aren't my favorite things in the world. Honestly I think of Dwight Schrute when I see them. But I was given a bag full and this recipe actually made them taste...not bad. I much preferred the sweet potatoes and onions in this recipe to the beets, but overall not bad.

Sugar Glazed Walnuts

Reviewed: Sep. 23, 2007
I make half the recommended quantity by halving all the ingreds and microwaving for 3.5 mins. Start checking on it every 30 secs after the 2 min mark. It should start to look a light caramel-y brown in color. Better to check often and pull it out too soon. If you over-do it, it will burn in an instant and there's no recovering your walnuts then.

Overnight Blueberry French Toast

Reviewed: Sep. 23, 2007
We did not enjoy this very much. It seems to be a ton of calories that don't really deliver on the taste. The cream cheese is unnecessary and sometimes unpleasant - it doesn't really melt down so every once in a while you get a big blob of cream cheese in your mouth leaving you wonder "where did that come from?" I like a good, rich breakfast every now and then, but I don't like feeling like there's a bit lump in my stomach and no yummy enjoyment to show for it.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

Reviewed: Jul. 27, 2007
Nice combo of veggies and good way to eat those leafy greens. Subbed sliced yellow bell pepper because I was short on tomato. The squeeze of lemon at the end really gives it a satisfying zing.

Lemon Poppyseed Scones

Delicious with a bit of apricot jam and cold class of milk! I followed other raters' suggestions and added more lemon zest (full lemon's worth) and less baking soda (3 teaspoons only) and it was just right.

Strawberry Muffins

Reviewed: Apr. 25, 2007
Good texture. I altered the ratio of buttermilk and oil to 2/3 cup buttermilk and 1/3 cup oil. The strawberry flavor is subtle. Maybe the jam contributes to the moistness of the muffin. I would make again but would like to have more strawberry flavor.

Raisin Pudding

Reviewed: Apr. 2, 2007
Really enjoyed this and I'm not even that big a fan of raisins. I sub'd 1/2 cup of the raisins for 1/2 cup of currants just because I had them on hand. It makes a wonderfully moist loaf...not really pudding-ish at all. Will enjoy this especially at breakfast time. 50 mins was spot on as far as baking time for me too. Thank you for this recipe!

Raspberry Buttermilk Muffins

Reviewed: Mar. 20, 2007
Tasty! Came out a bit flat and dense so I will try the extra egg suggestion already mentioned. I thought they would need some extra sweetness so I sprinkled sugar on the top before baking. That gave it a nice crunchy crust but it turned out not to be necessary for the recipe. Will make these again with 2 eggs.

Buttermilk Shake

This was surprisingly tasty. Only 4 stars instead of 5 because the buttermilk taste was a bit sharp, but some tweaking with more ice cream or milk would even it out.

Almond Pear Muffins

This was alright. It was a little bland. Increasing sugar by 1/4 cup and spices to your liking might help. The almond pieces are also rather hard compared to the soft texture of the muffin.

Norwegian Waffles

Reviewed: Feb. 25, 2007
This was not very good. Even though the batter is runny, it still puffs up during cooking. Still the batter was very plain. We sprinkled banana slices on the iron first which really saved it. But the batter itself is plain and doesn't have much of a crunch on the outside.
