About this Cook
I'm a Hoemschooling SAHM of 3 children.
My favorite things to cook
I love sweet things, like cookies and cakes. But mostly I do the everyday dinner cooking and explore new things there.
My favorite family cooking traditions
Don't really have any yet. I've only been married a few years and have a few children that are really young. Other than have a huge amount of food for "SuperBowl Sunday" I don't have many traditions.
My cooking triumphs
Making really good biscuts. They are yummy, and simple too.
My cooking tragedies
I once accidentally bought condensed Garlic Mushroom soup and knew that I couldn't use it for the green bean casserole that I had intended. Instead of returning it I used the recipe printed on the can. I called for cooking chicken and then adding the soup as a sort of sauce. I was pregnant at the time, and the smell sent me running to the bathroom. I offered it to my husband. I said that while he didn't like the sauce, he thought the chicken was really tender. Did I mention that he actually rinsed the chicken off and ate it anyway?! Oops!

Quick Eggplant Parmesan
This was my first time eating and making the dish. I suggest you peel the eggplant before frying it, I found the skin too bitter and the texture was weird. I also found I liked the taste of this dish the 2nd day as leftovers. I didn't add mozz cheese to the frying pan as suggested, but I did sprinkle the eggplant liberally with garlic salt once out of the fryer. I then layered the dish like a traditional lasagna, and baked in the oven until the cheese on top was bubbly. Yum.

World's Best Scones! From Scotland to the Savoy to the U.S.
First time making scones EVER and they turned out GREAT! I Brittish woman even asked ME for the recipe! Didn't have unsalted butter, so I used regular butter and ommited the salt. I also didn't use the egg was either.

Southern Praline Pecan Cake
I've made this twice following receipe exactly and loved it. I think next time I'll cut the oil so it isn't as heavy. I also plan on drizzling some carmel over the slices for an extra yumminess. LOVE IT!
