Tex-Mex Beef and Cheese Enchiladas

Wow, I hadn't made enchiladas in a while and this was so easy. I loved that it didn't call for canned sauce. I didn't use the flour, I had a couple of tablespoons tomato paste I had to use up and that just worked perfect with the other ingredients. To cut the fat a little I used super lean ground beef, and I actually used the meat as the filler instead of cheese and topped with the rest of the sauce and sharp white cheddar.

Flat Iron Steak and Spinach Salad

Wow, I was looking for a way to use my chicken and spinach, and found this recipe, and I thought if I marinated my chicken in italian dressing, that would work instead of the steak. But, as I prepared my sauce, I realized I had no mushrooms or bell pepper. I decided to give it a go anyway, and oh my word, just the red onion (and 3 small cloves garlic) in the sauce, and it was incredible! The wine and the sweetness of the red onion when it cooked down worked so well together. I used fresh asiago and a little fresh tomato between the chicken and spinach (which I didn't wilt since the dressing was still simmering when I poured it on the spinach), then topped it with some green onion...It was so easy and looked beautiful, and tasted phenominal! I can't wait to do it right with steak and blue cheese! What a perfect recipe!

Glittery Snow Flakes

I had to add 1 egg and an egg yolk for it to turn out (probably only two yolks if I was using a press, but I used a pastry bag instead). Then, the cookies were incredibly light and delicate, and really delicious.

Honey-Mustard Grilled Trout

Wow, so easy and really good - different from what i usually do with trout! I grilled it with thin sliced onions under it on foil, then flipped the whole thing over, grilled for another five minutes, and the onions were perfect!

Curried Rice Pilaf

Great and easy. I like to use more healthy options, so I think I'll use a wild rice blend next time, but this really had the perfect amount of seasonings and flavor. And nice and easy - thank you!

Spinach Cantaloupe Salad with Mint

Wow - even my 16 year old brother had seconds and he is a picky eater. I was in such a hurry I forgot the red peppers and it was still amazing! Can't wait to make it the right way!! I followed the reviews and chopped the melon and avocado, but i did have to heat the vinegar and jelly and mint sauce (I found this amazing sauce while shopping for apple mint jelly - it has malt vinegar, white vinegar, sugar and egyptian mint leaves, so i used that and added an extra bit of white wine vinegar); i simmered the full dressing recipe on the stovetop for about 20 minutes on low heat to break down the jelly and bring out the garlic...It was so aromatic and the flavors were amazing. What a fantastic, easy and elegant salad!!

Spinach Stuffed Pizza

This was great! My husband wanted calzones, and I try to put in anything healthy that I can, so I snuck this on the table as a perfect compromise. I added a little ricotta to the filling (I think next time I'll add some garlic), and threw some sausage on half of it - on top with the parmesan, and it came out perfect. I can think of a hundred variations; the left over filling and mozzerella I added some shrimp and an egg to, threw over some spagetti and baked for half an hour. That came out excellent, too!

Mary's Pecan Crusted Chicken

This was great! I let it chill, sliced it and served it on a salad of romaine, strawberries, cantaloupe, avocado, and candied pecans, topped it with raspberry salad dressing and gorgonzola cheese. I also lightened it up a little by pan-searing it for only a few minutes in olive oil, then baking it for ten minutes in the oven. I served it for my mom's birthday and the entire family loved it! Rave reviews all around!

Mandarin Almond Salad

Really great, refreshing recipe. I added a little balsamic and replaced the sugar with honey for the dressing. I also added strawberries (julienne sliced for easier munching). I didn't have almonds, but used walnuts, and added a little shredded cabbage for crunch and color. The flavors worked wonderfully, and it was almost too beautiful to eat. Incredible, refreshing and the perfect summer salad.

Very good recipe - easy and delicious. I added a little chili powder and a dash of cayenne to spice it up, and honey dijon insead of regular mustard, but easy, easy, easy to do any number of variations, or good as is!

I don't know if it turned out like it was supposed to or looks like it was supposed to, but it tasted great! the cream cheese mixture marbled through and was this dense richness through out...we didn't frost it or anything - it is perfect as is!

Lentil Chili II

Wow, thought I'd made up an original recipe until I did a search! I used spiced chili powder (which has oregano, garlic, cumin and mild chili powder), California chili powder (mild and sweet), threw in a whole jalapeno and some pepper flakes, and two (small) cans of tomato sauce instead of the paste. It was so thick and had such great flavor and texture. The hubby loved it, and we have been snacking on it since dinner last night. I would have thrown in another jalapeno (or two!), but the hubby can't take a lot of spice. He thought it was perfect with the one. This is the first time I've cooked with raw lentils and I could not believe how easy it was and how good it turned out!

Vegetarian Four Cheese Lasagna

I have been wanting to make a pumpkin lasagna for years and couldn't believe stumbling accross this recipe. It was amazing! My dad was a chef for 9 years and couldn't pinpoint the pumpkin till i pointed it out - the flavors were incredible and blended together so perfectly. I will make this again and again! I had to make two changes - I did only use the top layer of mozz (it got too big for my pan!), and i used canned pumpkin, and it was still so rich and creamy and delicious. Thanks so much for this recipe!!

The marinade is definitely quick and effective, but could use a little something extra than just the soy and apple cider vinegar - but great - quick and delicious as is. Definitely 5 star with a little tweaking!
