Mary's Pecan Crusted Chicken

This was great! I let it chill, sliced it and served it on a salad of romaine, strawberries, cantaloupe, avocado, and candied pecans, topped it with raspberry salad dressing and gorgonzola cheese. I also lightened it up a little by pan-searing it for only a few minutes in olive oil, then baking it for ten minutes in the oven. I served it for my mom's birthday and the entire family loved it! Rave reviews all around!

Spinach Cantaloupe Salad with Mint

Wow - even my 16 year old brother had seconds and he is a picky eater. I was in such a hurry I forgot the red peppers and it was still amazing! Can't wait to make it the right way!! I followed the reviews and chopped the melon and avocado, but i did have to heat the vinegar and jelly and mint sauce (I found this amazing sauce while shopping for apple mint jelly - it has malt vinegar, white vinegar, sugar and egyptian mint leaves, so i used that and added an extra bit of white wine vinegar); i simmered the full dressing recipe on the stovetop for about 20 minutes on low heat to break down the jelly and bring out the garlic...It was so aromatic and the flavors were amazing. What a fantastic, easy and elegant salad!!

Vegetarian Four Cheese Lasagna

I have been wanting to make a pumpkin lasagna for years and couldn't believe stumbling accross this recipe. It was amazing! My dad was a chef for 9 years and couldn't pinpoint the pumpkin till i pointed it out - the flavors were incredible and blended together so perfectly. I will make this again and again! I had to make two changes - I did only use the top layer of mozz (it got too big for my pan!), and i used canned pumpkin, and it was still so rich and creamy and delicious. Thanks so much for this recipe!!

The marinade is definitely quick and effective, but could use a little something extra than just the soy and apple cider vinegar - but great - quick and delicious as is. Definitely 5 star with a little tweaking!

Very good recipe - easy and delicious. I added a little chili powder and a dash of cayenne to spice it up, and honey dijon insead of regular mustard, but easy, easy, easy to do any number of variations, or good as is!

Very good - very easy. Loved the difference of cornmeal as opposed to bread crumbs. dredging in milk really kept the fish moist and the effect was perfect!

So good - the flavors are incredible. I love the unique combinations and the impressive medley that is hearty, warming, exotic and homey all at the same time. Even my husband (who's a "meat at every meal" kind of person loved it!). Cannot wait to finish the leftovers tomorrow!

I don't know if it turned out like it was supposed to or looks like it was supposed to, but it tasted great! the cream cheese mixture marbled through and was this dense richness through out...we didn't frost it or anything - it is perfect as is!

E-Z Marinated Swordfish

I wasn't too impressed, but it may just be that i'm not a fan of swordfish. The flavors went together better than i anticipated, and i let it marinate a full 3 hours, but the tang of the lime and white wine vinegar were almost overwhelming. I will try it again, only marinating an hour and a half or so and adding a couple of teaspoons of honey. i think the sweetness would add a little more complxity to the tang and heat. I'll update when i try it next.

Blueberry Crumb Bars

don't sub anything except butter for the shortning! i ran out of both and used oil and it was still really good - but definitely would have been better otherwise. next time i'm giong to use some brown sugar, as has been recommended, and stick to the recipe and i'm sure it will be phenominal! Oh, my favorite was that it wasn't super sweet - really fresh!

Tex-Mex Beef and Cheese Enchiladas

Wow, I hadn't made enchiladas in a while and this was so easy. I loved that it didn't call for canned sauce. I didn't use the flour, I had a couple of tablespoons tomato paste I had to use up and that just worked perfect with the other ingredients. To cut the fat a little I used super lean ground beef, and I actually used the meat as the filler instead of cheese and topped with the rest of the sauce and sharp white cheddar.
