Poblano Chile Enchiladas a la Gringa

Reviewed: Nov. 9, 2006
holy guacamole!!! this was so good! i added about a teaspoon of tarragon and some cilantro to the boiling chicken mixture, and i roasted a red bell pepper along with the poblanos just for fun. i used Monterey Jack cheese instead of mozzerella because it just seemed a little more authentic. next time i would use more cheese, probably some inside the actual enchilada as well as on top. the kids and husband ate it up quick! one word of warning, if you are roasting the peppers on a gas range this meal is a pretty good bit of work.

Slow Cooker Rosemary and Red Pepper Chicken

Reviewed: Aug. 21, 2006
wonderful! this is my favorite recipe that i've gotten from this site so far. i changed the following things...i added some mushrooms and about half a can of chicken broth as well as some garlic salt and served it over angel hair pasta. it was so good that i'm going to recommend it to my dad!

Spinach Stuffed Chicken Breast

Reviewed: Aug. 26, 2006
my husband is anti-veggie, but he really liked this. i would have liked it more with a creamier filling and possibly some mushrooms.

Chicken Marsala

Reviewed: Sep. 16, 2006
this was really good for me, but i did change a few things...i dipped the chicken in a milk and egg mixture before dredging it in flour, i also used more seasonings than the recipe called for; more salt, some fresh thyme, garlic salt, and more pepper. i used 5 tbsp of olive oil instead of adding the butter. yummy!

Hearty Mince

Reviewed: Oct. 4, 2006
this was pretty good for what it was. i used more tomato juice and beef stock instead of the water and i garlic salted and cajun seasoned it pretty well. it was better than hamburger helper which is what most of the reviews compare it to.

Easy and Quick Swiss Steak

Reviewed: Aug. 25, 2006
this was good-ish, not nearly as good as my mom used to make. next time i think i'd add some stewed tomatoes and a good bit more salt.

Bourbon Pecan Chicken

Reviewed: Sep. 28, 2006
this was just ok...my husband actually ate it in spite of the dijon mustard. i really think this was misnamed and should have been called 'dijon-bourbon chicken' at the very least.
