Pineapple Upside-Down Cake VII

Delicious! I baked mine in a regular 9x13" cake pan and it came out perfectly. I used the pineapple juice as water substitute and I also added some of the pineapple juice to the brown sugar butter mixture. Yummo : )

Brownies with Peanut Butter Fudge Frosting

DELICIOUS!!! I even ate them warm...yum! I used what I had on hand for the peanut butter frosting (sweetened condensed milk, peanut butter, and 1/4 cup butter). I melted butter in the microwave and then used a spoon to mix in the peanut butter; then, I added the sweetened condensed milk. Sweet, thick, and tasty! We all ate a spoonful of it.

Chewy Peanut Butter Brownies

Super recipe ~ I did follow other reviewers and only put in 1 egg and added extra peanut butter and these were chewy and delightful! We ate the entire pan in one night! : )

Yummo! We are not pasta people per say, but, this is absolutely delicious. Just made minor changes (as to what I had in the pantry). I used fresh mushrooms and I made my own cream of chicken sauce. A winner! : )

Five-Minute Blueberry Pie

This recipe was delicious! Even my 95 year old Grandma LOVED it! I did not have a pre-made graham crust on hand, so I made my own (crushed graham crackers and butter). And I also only had about 2 cups of fresh blueberries; and it still came out perfect! Thank you...oh! and it only took me about 10 minutes to make from start to finish! :)

Salmon with Brown Sugar Glaze

Delicious! My 1st attempt at salmon and yummo. I was out of Dijon, so I used regular yellow mustard. Maybe a little less brown sugar next time but good recipe. Thanks : )

Split Pea and Ham Soup I

EASY & Delicious!! I added 2 carrots (diced) and they melted right into the soup along with the split peas. I also added a dash of garlic and celery salt. I did use the left-over Easter ham bone (let simmer for 4 hours on the stove) and the meat was so tender and just fell right into the soup. : )

Chicken Florentine Rice Casserole

DELICIOUS~I used homemade chicken stock in place of water (bc I had it on hand) and no parmesan since I was out of it. Wow~creamy and good flavor. Thanks for the recipe : ) note: the rice on top stayed a bit crunchy

Strawberry Satin Pie

Let me tell you! This pie was exceptional! Hubby and I ate the entire pie in two nights. It's not too sweet and it begs to be eaten bite after bite after scrumptious bite! Yummo! : ) fyi...we used a pre-made graham cracker crust. It's a must! Just the perfect crunch and sweetness. Oh, and no almonds, simply because we did not have any in the house that day.

Easy Lemon Cookies

I saw this recipe and it looked so delicious; but I did not have a lemon cake mix in the house. So, I used a butter pecan cake mix and also crumbled in some pecans in the cookie dough. Delicious. The in-laws and hubby devoured them all. Thanks : )

Awesome Egg Rolls

These are super delicious! I have tried other egg roll recipes before; but this one takes the cake. I did bake them at a high heat (instead of deep frying them) and they still came out wonderful! Thanks for a good recipe! : )

Strawberry Pie

My Hubby loved this pie! I used a pre-made graham cracker crust. We topped with whipped cream. I thought this was more of a jello dish versus a traditional strawberry pie; but, it was still delicious! : )

Guinness® Corned Beef

My father-in-law makes this dish. It is my absolute favorite way to cook and eat corned beef...and I am not a beer drinker. I can't seem to get enough of this. I suspect, once you have it, there is no turning back to the boiling method! : ) UPDATE: I tried to make this recipe (following the instructions here) and it did not turn out well. I suspect maybe the cut of meat was too big or something. I guess I will let my Hubby's Dad be the corned beef maker from now on.

French Toast Casserole

This was absolutely delicious and will become my new way of making french toast from now on. It was crispy on top and creamy in the middle. YUMMY! : ) fyi...I did forget to butter my pan, so, I stuck butter chunks around the edges and inbetween the slices and it worked; no stickage : )

Crab Stuffed Chicken Breasts
