The Best Banana Pudding

Delicious! I had a guest say "I know this is a faux pas, but if you have any extra, can I please take some home?" This does not taste like instant pudding at all. I crumbled the nilla wafers and I let the whole dish sit in the fridge over night--the vanilla wafers became deliciously soft. I omitted the condensed milk and used 2 1/2 cups cold milk instead (still plenty sweet), and I only used 8 oz of whipped cream since that was all I had. It was so good. I have never liked a pudding so much.

Pesto, Goat Cheese, and Sun-dried Tomatoes Quiche

Wow. This packed so much flavor. It was a huge hit. The goat cheese complemented the other flavors so well. I did add more pesto and more goat cheese because I used a deep-dish pie crust. The only thing I would recommend is pre-baking the crust. The bottom of the crust practically disintegrated under the weight of everything else, but the dish was still phenomenal.

Avocado Feta Salsa

This was a huge hit at my dinner party tonight. It was gone so fast, I oouldn't believe it. I too subbed cilantro for the parsley and oregano; I also added chopped yellow pepper for color. I squeezed a fresh lime in before serving and did not use the vinegar. I served this with oven-baked naan brushed with olive oil. Seriously good. This recipe would have been delicious as written; I made my subs to complement the rest of my menu. Thanks for this!

Mmm-Mmm Better Brownies

These were really good, and really convenient, since all of the ingredients are "on hand" ingredients. I made the recipe exactly. These are cake-like brownies. Very tasty. I did have to cook them 10 minutes longer than the recipe called for before they were done in the middle.

Feta Cheese Foldovers

Excellent and flexible recipe. I used garlic and herb feta, and I added roasted red and green peppers, a little mozarella to cut the strong feta flavor, and a little spinach. I diced the red peppers and mixed all ingredients before putting them on the puff pastry. I made 18 servings instead of 12, because I wanted them smaller. Everyone loved these. They were so pretty, people thought they were not home made. Someone actually called me the next morning and said that they woke up craving these.

Kentucky Butter Cake

Everyone loved this but me. I didn't especially like the butter sauce, and though I poked both large and small holes throughout the bottom of the cake, I wasn't pleased with the way it dispersed itself. Apparently it was only me, though! Because everyone else had seconds. I served it with an apple compote.

Neapolitan Bundt Cake

This was delicious. I too had a difficult time finding strawberry extract, so I too used strawberry syrup. I was worried using the syrup would cause the cake to taste too artificial, but it didn't. To the chocolate portion, I added real cocoa to help get that real chocolate flavor. I made a strawberry glaze using powdered sugar, soft butter, strawberry syrup, and a little water. It was delicious. I filled the center of the finished cake with sliced sugared strawberries, and I served it with chocolate and vanilla gelato. Everyone raved about this cake.

Sangria! Sangria!

This was delicious. I used peaches instead of cherries. Also, I used a pineapple Mexican soda that I found in individual bottles in the Mexican aisle of the grocery store in lieu of the optional carbonated beverage. It really came out fantastic.

Chicken Tortilla Soup I

I made a double batch of this soup to serve about 12 people. Every one of them raved. The only things I changed were to use cumin in place of oregano and add more chicken. The soup came out very thick and hearty--I let it simmer for quite a while because the rest of the meal wasn't done yet. I think this helped the flavors blend better and made the soup thicker. This would be super-easy to make vegeterian as I intend to do next time.

Amazing Chicken

This chicken was tender and moist. I used plain breadcrumbs and added my own seasoning: some garlic, oregano, onion powder. I also added fresh grated paremesan to the breadcumbs and that really added a nice taste. I experimented with how thick to spread the mayo since I had never done it this way. I found that a thin layer was the best. Full coverage, but not thick. When I spread the mayo on thicker, it was a little too wet and mayo-y.

Peanut Butter Cup Cookies

These were good. I didn't have a mini muffin pan, so I just rolled the balls and put them on a cookie sheet. Because of this, I couldn't put a mini PB cup inside of them, so I cut the PB cups in half and stuck half in the top of the cookie. They still tasted good--they were the first thing gone at the party I brought them to. I had to cook these longer than the recipe suggested.

Slow Cooker Chili II

This was pretty good, but not "wow." I had four men eat it who love chili and I barely got a compliment on it. Boyfriend said it didn't have enough flavor, and that's in spite of the fact that I inreased the chili powder. I don't eat chili so I have to go with what they say.

Homesteader Cornbread

Everyone loved it! This cornbread was very moist. I cut down on the sugar by just a coupld of TBS and I think next time I will make the recipe as is, because I'd like to try it a bit sweeter. I like things saltier than most, I think, so next time I will add just a bit more salt. Baking time was accurate. My boyfriend considers himself a cornbread connoussiuer and he loved it.

Award Winning Soft Chocolate Chip Cookies

I am not trying to be contrary, but I thought this tasted like most other choc chip recipes. They are definitely good, but I didn't think they stood out, and neither did the people I served them to. I think one thing is that the recipe definitely needs a little salt. They do have a great texture, though!
