Grandmother's Buttermilk Cornbread

Yummy! This is the kind of cornbread that I like. I am picky about cornbread. The buttermilk makes all the difference. It was so good with my white chicken chili. mmmmmmm.

Caribbean Jerk Pork Chops

Only gave it four stars because 3/4 c of water is way too much. Otherwise, I loved the rub. The flavors were great and super aromatic. I served it with Hot Banana Salsa from allrecipes and coconut rice. I thought it was a totally yummy combination.

Key Lime Pie VII

LOVE this! I have made it once with lime and once with lemon. Next time, I am thinking of making it with triple citrus (orange, lemon, lime). I just love the texture of this, it is super creamy and tangy and sweet in a balanced way. I would recommend sticking with the graham cracker crust, because I tried the NILLA crust made of out of vanilla wafers and it was just not as good. Whipped cream with orange liqueur for topping would be really good, but I haven't tried it yet.

Easy Mexican Casserole

This was pretty good. It is super economical. For health reasons, I will probably not use chips again on the bottom, maybe some high fiber tortillas instead. We skipped the black olives. Overall, we thought it was quite good and it made really good leftovers.

Banana Bread II

I loved this. So yummy. I also poured a little bit of sugar in the raw on top of it and it made a yummy crunchy crust. But that was just icing on the cake, so to speak! Oh, and I didn't have any walnuts.

Broccoli and Cheddar Soup

This was really nice on a cold night with crusty bread and green salad. We really liked it. I think it is a wonderful base recipe that could be used with additional veggies. I had never tried the method of mixing the flour into the milk before pouring into the pan. It worked just fine. I just whisked the flour and milk together a little at a time. Usually when I have made cream soups/sauces, I've started with butter and then flour and then milk. So that was interesting and didn't require much babysitting, which makes the soup very easy.

Snickerdoodles from Crisco® Baking Sticks

These are the snickerdoodles I remember from being a kid. I wish I had the butter-flavored Crisco. I think that would have been better. I had plain. These were good. I thought they needed 9 minutes at 400. I have a thermometer in my oven and the time was a little short.

Cinnamon Gelatin Salad

My great-aunt used to make this. I made again for the sake of nostalgia and I think it is quite interesting. Someone said you can used lemon jello, but I would recommend sticking with the raspberry. It's probably the best way to go in the world of strange mid-century jello salads.

Slow Cooker Lemon Garlic Chicken II

This was really good for a slow cooker recipe. I increased the liquid by adding about a 1/2 c. of white wine and a little more water. I like to have lots of sauce at the end! I also added a little lemon zest. Instead of oregano, I used herbs de provence because I like the taste better. This was good. It was very lemony. We just put it on pasta, though I think it would probably be better on rice but pasta was faster. I think I will be using this one again.

Melissa's Turkey Meatloaf

I loved this! Of course, I had to make a few changes based on what was in my pantry. I added one finely grated carrot, used dry Italian herbs, garlic powder instead of fresh, grated onion instead of minced, plain panko crumbs, a little mayo (out of eggs) instead of eggs, and ketchup instead of soup. But it's still the same basic idea and it had a great flavor! Served with baked potato and green beans. Great recipe! We will have this again.

Basic Cream Cheese Frosting

Perfect cream cheese frosting. Frosted a red velvet cake beautifully. FYI, this also freezes well. Just give it enough time to get to room temp/spreadable consistency.

Carrot Cake Cookies

These were really yummy! I am a carrot cake lover and I loved the taste and texture of these cookies. I frosted them with cream cheese frosting that I had left over. I also added a sprinkle of nutmeg and a sprinkle of allspice as well as a tsp of vanilla.

Stir-Fry Spinach Salad

This was kind of an odd combo of different things, but overall we liked it and thought it was quite good. Nice for a change. I made a big batch of rice with it and kind of mixed it all together on my plate. It was nice for an easy summer meal.

Creamy Smoked Salmon Pasta

This was super yummy! I agree that it really tastes like a lighter version of pasta carbonara. Of course, I had to use a whole cup of romano and 2% milk was all I had. Otherwise, I followed the recipe exactly. It was easy and tasty. In the future, I might use a different noodle than penne pasta as it is not my favorite but that's a pretty minor detail.

Coconut Curry Tofu

I really loved the combination of flavors. My husband really liked it. I think it's important to follow some simple steps to improve the taste and texture of the tofu. Using a brick or heavy can to smash extra water out of it, as well as freezing it will improve texture. This dish tasted MUCH better the next day after the flavors had a chance to meld. I will be making this one again.
