About this Cook
I have a passion for cooking HEALTHY, easy and fun foods for my family. I love the challenge of a new recipe that I can adapt to make as healthy as possible without losing any of the original flavor. I'm a foodie through and through. I am also a huge advocate of fitness. I am first and foremost a runner, but I also love hiking, biking, kickboxing, strength training, swimming and any other activity that makes me sweat. I competed in my first triathlon in October '08 and I am now seeking my next fitness challenge. Follow along with me on my journey at my blog, Running with Food, at www.runningwithfood.com.

Flax and Sunflower Seed Bread
This recipe is awesome! I followed the ingredients to a "T" and prepared the dough in the bread machine. Here's my modification: After rising, roll out the dough lengthwise and cut into small portions for sandwich rolls. Shape each portion into a round "roll" shape and place rolls on a greased baking pan, cover with a towel and allow to rise for 45 minutes to 1 hour. Bake at 350 degrees for 15 - 17 minutes, until lightly browned. Yum! Enjoy.

Whole Wheat and Honey Pizza Dough
This recipe is super easy and super yummy! I used it to make calzones and I think it will be even better as pizza!

Guinness(R) Corned Beef
The slow cooker is a must for this recipe! Cooked on high for approx. 5 1/2 hours. I highly recommend adding some cabbage and carrots to the pot during the last hour of cooking. Yum!
