Coconut-Apple Cobbler

I made this about 6 hours ago, and it's almost gone! My husband loves cobbler and he LOVES coconut. How easy this was and what a hit! It will definately go in my "all the time" recipe file. I will say that the middle of the cobbler was somewhat "doughy" still, and I couldn't bake it longer or the coconut would have burnt. But we don't care and will make this over and over!

Monkey Bread I

This is fabulous! And so, so simple. I got up early on Saturday morning to make this for my hubby for breakfast and it was in the oven in no time. Really cheap to make too. I didn't use the nuts, but the raisins were a great addition. I think other dried fruits would be good as well. I am going to try dried pineapple and coconut next time for paradise monkey bread.

Sherry Apple Pork Chops

I wasn't too crazy about these. The pork was cooked perfectly, but the sauce seemed a little bland and still really thin, even after doing the extra sherry/corn starch trick 10 mins before done like another reviewer said. While it wasn't awful, I don't think I will be keeping this one in my box.

Arkansas Green Beans

Fabulous! I cut the recipe in half and cooked in an 8x8 and there were no leftovers! Super easy and so good. I didn't cut back on the sugar like some suggested and I thought it was yummy.

Pineapple Pecan Pie

This was so delicious! It is now in my husband's top five desserts. I followed the measurements exactly, however, I had way too much pie filling, so I took two crusts and split the filling between the two. It made a nice size piece of pie, and I was able to put one in the freezer for later. Such a yummy pie!

Coconut (Haupia) and Chocolate Pie

This pie was super yummy and pretty easy to make. The only complaint I have is that there was SOOOO much filling. Next time I make this, I will split it up between two pie shells. It will be perfect then. I did add 1 cup coconut to the white pudding filling and topped with chocolate chips and coconut.

Biscuit Pizza Bake

This was FABULOUS! It is now my husband's favorite casserole. I changed a couple things. I only used 1.5 cans biscuits, and I used a 9x13 pan. I cooked the onions and pepper with the beef, so they wouldn't be too crunchy. I used Turkey pepperoni. I cut it into 8 servings and they were huge....great to take to a potluck! Freezes really well too....having it this weekend; leftovers from the freezer. :)

Caramel Shortbread Squares

These were really good! The only thing keeping me from giving it 5 stars was the shortbread. I will try and find a different recipe for the shortbread; this one crumbled horribly and they were almost impossible to keep together once cut. Super great taste though.

Roast Pork with Maple and Mustard Glaze

This was heavenly! I followed some other's advice and browned the roast on all sides and then put it in the crockpot, covered it with rest of ingredients and then cooked on low for 8 hours. It was pull apart tender. I also took the sauce from the crockpot, added some cornstarch, brought it to a boil and made some super yummy gravy to go on top. Highly recommend this to anyone!!!

Tiramisu Cheesecake

I LOVED this but I did make quite a few changes...totally redid the crust: 6 oz. vanilla wafers; crushed fine mixed with 2 T melted butter and 4 T kahlua. After I pressed it into the pan, I brushed espresso over the top. To the filling: I added 2 T kahlua and 1 T espresso. I made a ganache for the top too that was killer: 4.5 oz. chocolate, chopped mixed with 1/2 cup boiling heavy cream, add 1 T Kahlua and let cool before pouring over cheesecake! So yummy!!!

Basic Cheese Polenta

This was so yummy! I made it and only added 3/4 cup of cheese since that was all I had and it was still great. I spread it into a 13x9 pan, chilled for at least 4 hours, cut it in circles and pan fried with garlic salt. I topped it with marinara sauce and it got rave reviews from my guests. Super easy to make ahead too!

Rich Chocolate Frosting

This was FABULOUS! I had a HUGE cake to ice so I altered the measurements to 1.5 cups butter; 6 cups sugar, 1 cup cocoa and 1/2 cup milk. It was so delicious and so easy to pipe. This is my go to chocolate recipe from now on.

Sour Cream Pork Chops

I followed advice of other reviewers and spiced up the flour with garlic powder, paprika and pepper. I also added a can of cream of mushroom soup to the bouillon water and let it thicken before i poured it over the chops. I added an 8 oz. container of sliced fresh mushrooms as well. It was AMAZING! I cooked it for 4 hours on low and 1 hour on high and it was so tender but didn't fall apart so it turned out to be the perfect timing. This is a keeper!

Honey Roasted Red Potatoes

These were good. I do agree with the other reviewers; the sauce should be doubled, and maybe I didn't broil them long enough, because they didn't get as crispy as I wanted, but I will make them again; the flavor was great!

True Blue Custard Crunch Pie

OH MY! This was heaven on a plate! I used a frozen pie crust and I changed the topping a little. I didn't add pecans, but I did add 1 T. flour, 1 T. white sugar, 2 T. brown sugar and 2 T. oats...it made the perfect streusal topping. I had to bake the filling for 33 minutes and then 15 for the topping. I can't wait to try other fruits with this!
