Turkey Tenderloins

Reviewed: Mar. 13, 2012
I tried this exactly as the recipe stated, and hated the marinade. Crazy salty, even though I used Kikkoman's lower sodium soy sauce. And the taste of soy was overpowering. I couldn't figure out how to salvage it, so I threw it out and did something entirely different with the tenderloins. So glad I tasted the marinade before putting it on the meat. This is one of those very rare times that I have a significant difference in opinion from the majority reviewers. I was counting on this recipe's working for me, b/c I was serving it to guests. Oh, well! Still glad I tried it.

Bacon-Wrapped Potatoes

Reviewed: Dec. 12, 2011
What did I do wrong? I'm an accomplished cook, and made these as the recipe states. The bacon didn't cook, even after more than 90 minutes in my oven (it's not broken and I check the temperature accuracy regularly and often). I had to finish off the bacon by putting the potatoes in a hot fry pan, which took another 10 minutes. Crazy! And the end result wasn't worth it. No thanks! I'll separately make bacon to go with my conventionally made baked potatoes. This was not good. Big waste of time.

Slow Cooker Turkey Breast

Reviewed: Nov. 24, 2011
This finished for me in five hours, and it was very dry; so maybe 4.5 or 4 hours wuld have done it. Beyond the dryness, the flavor was not so good. Too salty, too onion-y, not like the turkey breasts I've enoyed before. Not making this again. And if you DO make it, audition it before Thanksgiving; I wish I had. This was the turkey I served on The Big Day, and it was lacking. My husband thought it was ok, but full disclosure: he eats anything.

Slow Cooker Stuffing

Reviewed: Nov. 24, 2011
Didn't work at all for me; I made it exactly as written. I won't ever make this again. I checked on it after four hours and it was so, so well done as to appear and taste almost burnt. Maybe if I had checked at 3 hours. Still, this recipe isn't going to happen for me.

Cream of Mushroom Soup I

Reviewed: Nov. 21, 2011
Very good. Probably would get 5 stars if I had sherry to add. A bit time consuming (even thought I bought presliced 'shrooms), but worth it. Next time I'd add a little minced garlic for a kick. Didn't make that much; about six cups. I recommend it.

German Sweet Chocolate Cake I

Reviewed: Oct. 23, 2011
Airy , like angel food but not so spongey. The day I made it, it was ok; not as sweet as I'd expected (or would have liked). The next day, after refrigeration, it was FABULOUS. Husband said best G.C. cake he'd ever had anywhere. I used 2c + 4T cake flour instead of regular. The frosting made a lot. I used sweetened coconut, though the ingredients didn't specifiy sweetemed vs unsweetened. Glad I made frosting before making the cake b/c as another reviewer said, it takes a long time to cool. I expect my guests will like it. Also, mine took 45 minutes to bake. I kept checking, and it really wasn't finished until 45 minutes. The prep time was 35-40 mins.

Country Green Beans

Very good. I used chicken broth instead of water, bacon instead of ham, and sauteed the onion in the bacon drippings. I recommend this recipe. Thanks.

Creamy Potato With Rosemary Soup

Reviewed: Oct. 17, 2011
Very good. Not sure what it would take to make it "outstanding" and feel like I couldn't get enough. The serving size is about 3/4 cup. Bacon is a nice garnish; maybe next time I'll add some swirled cream to each serving. This took me an hour to make from start to finish. I increased the garlic, and the cayenne (which is very subtle) and you definitely need salt and freshly ground pepper. I'm glad I tried this. Not sure what the orange round things are in this photo, though; I'd love for someone to explain. This photo looked nothing like what I ended up with. Not even the green stuff. What IS all that, anyway??

Ultimate Twice Baked Potatoes

Reviewed: Oct. 5, 2011
Excellent. I might next time put a bit of bacon in with the potatoes, and put the rest on top. But anyway, I made this exactly as written, and we loved it. Will make again. Maybe next time try to finish under the broiler to kind of melt the cheese and crisp up the top; and maybe fill the potatoes through a pastry bag to make it look nicer than a flat mound. But YUM!

Apple Avocado Salad with Tangerine Dressing

Reviewed: Oct. 5, 2011
Wow. That dressing was amazing. Like others, I used drained mandarin oranges from a can (20 oz) and even so, it was to die for. I never woudl have thought of a salad like this. Thanks so much. Just beautiful! And easy!

White Chocolate Raspberry Cheesecake

Reviewed: Sep. 11, 2011
My guests raved and said it was the best c'cake EVER. I used seedless rasp preserves; next time I'll use >3T in the middle part (3T is perfect for the top). 12 oz bag of white chocolate chips wasn't quite enough, so I had to use part of a second bag, but now I'm not sure I had to make up the few ounces. Wrapped in foil and put in waterbath, and had it bake for an hour, then turned off oven and let it sit for another hour; didn't crack, and was perfectly level. Used Oreos (an entire package, around 2.5 cups) an that's the only way to go! Melting the white choc chips + cream was time consuming on stovetop, so I switched to microwave and even when it was done, I had to whisk it to get it all smooth. That was the toughest part of making this. I forgot the parchment paper and was ok without it, but next time I'll use it--that's as smart as using seedless raspberry preserves. Thanks for this recipe. Beautiful!!!

Apple Crisp III

Reviewed: Sep. 7, 2011
I agree with people who said it's good if you have just a few ingredients. I used 3 Granny Smith apples, which was 4 cups the way I sliced them, and this still was too flat. The water was way too much--this was too soupy, though I baked it as long as I could before the top would burn. The taste was good, but not the presentation. I'm glad I tried this. I made this for company and was actually embarrassed. I should have made it for myself first to see what it was like. Oh, well. Thanks anyway for the recipe.

Cranberry Mousse Pie

Reviewed: Sep. 6, 2011
I made the mousse part, didn't put it in a pie shell, and it was wonderful! My only mistake was to not let it chill until thickened; I rushed it at maybe 2 hours, and it was a bit runny, but my guests were none the wiser and raved. Oh, I also didn't use frozen whipped topping b/c of the chemicals in it; I made fresh whipped cream instead. So it probably wasn't as sweet as it otherwise would have been (which is a good thing--there's already a ton of sugar in this). LOVE IT!

Yummy Honey Chicken Kabobs

Reviewed: Sep. 6, 2011
Loved it. Made separate skewers for chicken, and for veggies. Good marinade for chicken breasts even if you don't make kabobs. Be sure to soak your wood skewers for 20+ mins. so they don't burn on a grill (I charcoal grilled mine). I tripled the sauce; probably could have done with only doubling as others did. I added zucchini chunks and mushrooms. Definitely will make again. Served with "Microwave fried rice" found on this site, and it was a wonderful meal.

Microwave Fried Rice

Reviewed: Sep. 6, 2011
This was pretty good, even though I used chicken broth instead of water (I had no boulion) and forgot the soy sauce (duh). The main thing is: use white long grain rice, not brown long grain rice, and the cooking instructions are spot on--which I appreciate b/c I can never make rice right. I hate when a recipe says "serves 6" but not what the serving size is. I meant to measure, but I think it's at least 1 cup per serving. It was a ton, whatever it was! This is a good basic rice recipe that you can do other things to. It's a keeper.

Penne with Chicken and Pesto

Reviewed: Aug. 15, 2011
Wonderful! But for me it was time-consuming to assemble. Still, excellent. My mistake was in overcooking it a bit. I didn't check until 40 minutes baking time and by then it was a bit dry inside, and crispy on top. I'll make it again but check after 30 minutes baking time. Wow, was this ever good! Could be b/c I used home made pesto and home made alfredo sauce, so bottled stuff may yield a different result. Maybe better, maybe not....

Easy Alfredo Sauce I

Reviewed: Aug. 15, 2011
Wonderful. Chefsingledad's comments were spot on. I'm so glad I made this! No bottled stuff for me anymore. And he's right, it's a base. I added a couple cloves of garlic, and now that I know what this sauce is like, next time I'll add some other fresh seasonings. This is a keeper! Thanks to Kathy Rose.
