Chocolate Zucchini Bread

This was sent to me with a rave review and a must-try! It was a little thick upon mixing, resembled a brownie mix, and since I wanted more of a bread texture I added 1 cup of buttermilk (because we all know buttermilk and chocolate are to die for!). I did mix the sugars with the wet ingredients, as this is the way I always mix our baked goods. I omitted the raisins and pecans and per review advice I used about 1/4 cup more cocoa(Hershey's Special Dark) and canola oil. Prepared this way, it was AWESOME! Next time, I will add some chocolate chips and lower the amount of sugar and oil, just to see if it works this way as well. For now I have 7 mini loaves (baked at 350f for 40-45 min) that I don't plan on sharing with the neighbors because I can't imagine giving away this yummy deliciousness and thinking we could have had more for ourselves. Next time...maybe ;-)

The Best Sweet and Sour Meatballs

I have been making this recipe for years and it still gets raves! I substitute all the time, sometimes turkey ground, brown sugar Splenda, low sodium soy sauce, and italian style bread crumbs. I bake the meatballs and then throw them in the sauce. ALWAYS DELICIOUS!

German Pancake with Buttermilk Sauce

This is a wonderful recipe! I have been making the pancake portion for awhile now and felt it was missing something. I came across this and found what I was missing! It's like we are eating a cinnamon roll. The only thing alternative I do is if I don't have any real butter, I use what I have on hand be it margarine or I Can't Believe It's Not Butter.

Banana Cake II

Love this recipe! My kids can't get enough! I don't make the frosting because it's wonderful all on it's own. Mine has never come out dry, always real moist and yummy! I do use 2 cups of mashed bananas so maybe that helps. Thanks!

I used Turkey Ground instead of beef and didn't have Saltines so I used italian style breadcrumbs(same amount). This was an outstanding recipe!!! I don't think I'll ever use my old recipe again!! Next time I am going to make a little more of the sugar and ketchup sauce to spread over when it's done. My whole family even my 21 month old daughter loved it! Thank you!!!!

Zucchini Bread IV

This is a great recipe! I don't really like real heavy zucchini bread so I patted the zucchini with paper towels to draw out some of the water. It stil came out real moist and real good! Thank you so much!!! Update on review: It is very important to beat the eggs exactly the way the directions say, it makes the bread so much fluffier.
