Grandmother's Buttermilk Cornbread

Fantastic cornbread--best I've ever had! The one-pan prep is also great. I served these at a chili cookoff and people ate it all up. You can really taste the buttermilk, which helped to cut some of the hotter chilis.

Creamy Saffron Shrimp with Gnocchi and Caramelized Onion

I wanted to like this more, but I found the paprika overpowering, but not in a flavorful way. Maybe the paprika I used was too old, so if I try this again, I would use a little or none, and substitute something a little spicier in its place.

Tomato-Curry Lentil Stew

This is a fantastic recipe that is filling and healthy and affordable. I tripled the recipe and made adjustments according to what I had available, and it came out delicious. The changes I made: Green pepper instead of celery; added one white potato, cubed; and added 1/8 tsp of cayenne pepper for a little bit of a kick.

Buttery Soft Pretzels

These are amazing! Everyone I make them for always request that I make them again. The only change I made is to replace oil with butter and to baste the dough in butter before adding the salt and baking.

Roasted Brussels Sprouts

This really is the best! I never had brussels sprouts before, but now I can't get enough. I use sea salt instead of kosher salt, and frozen brussels sprouts, and that works great for me. Easy and delicious.

Fabulous Zucchini Grinders

These were fabulous! I didn't have any rolls so I just sandwiched the zucchini betweens slices of toasted white bread instead. This is my preference, but I also added some sugar to the marinara sauce to cut down on some of the sourness of the sauce. Delicious!

Authentic Louisiana Red Beans and Rice

This was excellent, and I will be putting this into semi-regular rotation. I took some of the directions from others (added salt, added some additional seasonings like onion powder and garlic salt) but remained pretty true to the recipe.

4H Banana Bread

I followed this recipe almost exactly and the results were amazing. The loaf was moist and very flavorful (make sure to use very ripe bananas for maximum banana flavor). The only thing I did differently was that I sprinkled brown sugar on top for a crumbly, sweet topping.

Chicken Pot Pie I

Irish Lamb Stew

The recipes was delicious. Because it was what was available and what was more inexpensive, I used a combination of lamb shoulder and neck meat. And while I used the bacon fat to fry the meat, I used it sparingly and sometimes in combination with olive oil. My version also used Guinness instead of wine, and I used beef broth instead of stock, which worked just as great, and added an additional cup of the stock so that there would be more stew and it wouldn't be so thick (and it was still thick and hearty, but not solid). Highly recommended recipe!
